Maine oyster farm in Scarborough. Nonesuch Oysters are known for their bright, fresh, salty-sweet flavor with a delicate grassy undertone.

No doubt our river’s dynamic tidal flow, from outer Saco Bay deep into the protected wetlands, has something to do with this! Incoming tides usher in pure, briny seawater and sweet brackish water rushes through our site on the outgoing tides. The balance of the two gives Nonesuch oysters their unique flavor. Our Nonesuch Bélons are making a splash as well. The edulis has a round, almost scallop-sh

aped shell, and is considered one of the world’s most desirable oysters, no doubt due to its bold brininess, with what the French call a «noisette», or hazelnut, finish.

The unique grassy tones often found in Nonesuch oysters are a direct result of their coastal environment. Surrounded by salt marshes, these oysters benefit from the nutrient-rich runoff that flows into their habitat. The marsh grasses contribute organic matter and an underlying vegetal flavor profile to the oysters. This combination of briny and grassy notes makes Nonesuch oysters a must try.
