Chicken and Mushroom Alfredo Bake
Grated parmesan cheese
1 large chicken breast
1 lb sliced white mushrooms
1 jar Great Value Alfredo sauce
1 cup shredded mozzarella cheese
1lb penne pasta
1/4 cup milk
1/2 block cream cheese
Olive oil for sautéing
Italian seasoning
Garlic powder
Salt
Pepper
-Pre-heat oven to 375°
-Cook penne pasta as directed.
-While that is boiling, sautee your chicken in a TBSP of butter and cut up into small pieces, (i find this is easier to do WHILE cooking, with a spatula), and season with salt, pepper, Italian seasoning, and garlic powder to your liking.
-After the chicken is done, set aside and put a little olive oil in the pan. Sautee the mushrooms until soft and add in with your chicken mixture.
-Take the Alfredo sauce and drizzle enough on your baking dish to cover the entire bottom, spread around.
-Once your pasta is finished, mix in remaining Alfredo sauce, but reserve 1/4 cup for the top.
-Add cream cheese, milk, and a little more salt, pepper, Italian seasoning, and garlic powder. If too thick add a little more milk.
-Put in your baking dish and then top with your chicken and Mushroom mixture.
-Add remaining sauce to the top and then top with mozzarella cheese and whatever amount of parmesan cheese you like, I just lightly shook it over the dish before baking.
- Bake for 20 minutes, and the broil for last 2 minutes to toast the cheese.
