No-bake recipes are one of my favorites so I’m resharing a recipe that my whole family loves! These delicious strawberry coconut granola bites are perfect for Valentine’s Day or anytime you want a treat! ☺️
I recommend using a silicone mold to make them easier to pop out. However, you can also use a muffin pan and liners. This recipe makes 24 mini cups or 12 regular sized ones.
Ingredients:
🔹1 cup granola
🔹1/4 cup smooth peanut butter
🔹1/4 cup + 2 tbsp pure maple syrup (divided)
🔹1/2 cup unsweetened shredded coconut
🔹1/2 cup non-fat Greek yogurt
🔹1 cup white chocolate chips
🔹1 tbsp coconut oil
🔹1/2 cup chopped strawberries
🔹sprinkles (optional)
Instructions:
Mix the granola, peanut butter, 1/4 cup maple syrup, and shredded coconut in a small bowl.
Evenly distribute the mixture into each mold, pressing it down as firmly as possible into each cup.
Place white chocolate and coconut oil in a microwave safe bowl and melt in the microwave in 20 second increments, stirring in between increments.
Add melted white chocolate into each cup.
Then fill each cup with non-fat Greek yogurt.
Add sprinkles into each cup. (Optional)
Top with chopped strawberries and drizzle with the remaining maple syrup.
Place the tray in the freezer for approximately 3 hours.
Remove from freezer and let thaw out for a few minutes before enjoying! 😋
(You can store leftovers in an airtight container in the freezer for up to 4 weeks.)
