Crispy yet soft bhatura bread is typically paired with spicy chole and served as breakfast and sometimes also for dinner. This Chole Bhature hails from the state of Punjab but has gained popularity across the world.

Pro Tip for instant Bhatura: If you want to make instant bhatura, knead your flour(maida) with soda. You can call it sparkling water, club soda, seltzer, Perrier, soda water, or fizzy water.

SAVOURY DHOKLA - Crispy one!

Enjoy this crispy savoury dhokla with cup of tea. I made this for evening meal💫

Recipe:
1 cup besan
2tbsp rava/semolina (must)
1/4 tsp turmeric
1/2tsp grated ginger
Pinch of hing
1tsp sugar
2tsp oil
1/4 tsp salt
1tbsp lemon juice
1 cup curd/buttermilk
ENO (one packet)

Cook in the microwave for 3-4 mins or over a water bath until cooked through.

Cut into any shape, temper with chillies + mustard seeds + curry leaves + sesame seeds until crispy😋😋

Eat with Tomato Ketchup or Green Chutny🌟 Enjoy😉

White Sauce Pasta!

The white sauce is made with plain flour/maida, in combination with milk and spices. Hence once the sauce is rested it may thicken and may have to adjust the consistency by adding water.

With respect to adding veggies, it is completely open-ended and you can add as per your preference. I usually add sweet corns, capsicum, onion, and broccoli.

Recipe:
1. In a large kadai boil 6 cup water and 1 tsp salt.
2. When water comes to a boil, add 2 cup pasta.
3. boil for 7 minutes, or until the pasta is cooked. Drain off the pasta and keep aside.
4. Heat 2 tbsp oil in a non-stick pan and saute 3 clove garlic(chopped)
5. Add onion, broccoli, capsicum(all chopped) and boil sweet corns with salt separately, after boiling for 5min add in the the veggies.
6. Saute for a minute or until vegetables shrink slightly yet remain crunchy.
7. Then, add ½ tsp pepper and ½ tsp salt.
8. Saute well until the spices are well combined. Keep it aside.
9. To prepare white sauce for pasta, heat 2 tbsp butter.
10. Add 2 tbsp maida and saute on low flame, saute until the maida turns aromatic yet do not change its colour. Now add 1 cup milk and mix well.
11. Until the sauce thickens without forming any lumps.
12. Then, add 1 more cup of milk and continue to stir continuously, mix continuously, until the sauce thickens. I use a whisk break the lumps.
12. Cook until the sauce turns smooth and creamy.
13. Add ½ tsp pepper, ½ tsp chilli flakes, ½ tsp mixed herbs and ½ tsp salt, mix well making sure everything is well combined.
14. Add in sauted vegetables and combine well.
15. Now add in boiled pasta and mix gently.
16. Add 2 tbsp of boiled pasta water if the sauce thickens.
17. Mix gently making sure everything is well combined.
18. Tada you’re done, just before serving white sauce pasta, garnish with grated cheese.

Enjoy your hot white sauce pasta with garlic bread. I already told garlic bread recipe in my previous posts.

South Indian Platter!

My most loved cuisine apart from momos is South india food. I know you all have recipes of these items here and there. I am gonna share only tips and hack while making south indian food.

TIPS FOR MAKING CRISPY AND FLUFFY UTTAPAM:

•Always make batter on a thicker side at home. This ensures multipurpose batter for making idli, dosa, uttapams, appe or dhokla.
• You need a thick consistency of the batter for making uttapams. A little thicker than the dosa batter and thinner than idli. So add water accordingly.
Ensure that the Tawa is warm on medium heat and not high heat or else the uttapam will start browning before cooking from inside.
• Do not add a lot of toppings as it can make uttapam soggy.
• Cook uthappam on both sides to ensure the crispy outcome.

TIPS FOR MAKING IDLI DOSA BATTER:

•I do not have a wet grinder. I make batter in my regular Indian mixer.
• Any high speed blender can be used.
• Food processor does not work to make a smooth batter.
• You can use a combination of any short grain rice and para-boiled rice like ponni rice if idli rice is unavailable.
• Split Urad dal works well too.
Fenugreek seeds or Poha are important to make fluffy idlis. ( At least use one of them.)
• If you are just making dosas or uttapams then you can skip them.
• Keep this multi-purpose batter on a thicker side so that you can use water according to the recipe you desire to make.
• This idli and dosa batter works well for uttapams, appe, handvo and dhokla too.
• Add salt only to the batch of batter you will be using.
• Adding salt to the entire batter will make it sour sooner and won’t last long.
• This batter stays good in the fridge for 3-4 days.

Chana Pataka | Chana Roasted

The tasty channa pataka can be part of a meal or a simple evening snack. Enjoy it with a cup of tea or coffee.

Ingredients:
* 1 cup Brown chickpeas (kaala chana)
* Pinch baking soda
* Oil for frying
* Punjabi Chat Masala (1/4 tsp Amchur masala, 1/4 tsp Garam masala, 1/4 tsp Black pepper powder, Pinch of red chilli powder, Jeera powder, 2 clove)

How to make Chana Pataka?

* Wash and soak the gram with baking soda for 8-10 hrs or overnight. Drain the water. Spread the gram on the kitchen towel and samp it. It should not be totally dried.
•Add oil in the pan on low flame. One the oil get hot add gram. Fry it till it get crisp and become light. Automatically it float
•Take out on Kitchen towel. When access oil absorbs take it in a bowl. Get masala ready.
•Put masala on fried chana. Mix it. Chana pataka is Ready.

Kanda Poha!

An authentic and traditional western indian breakfast recipe made with beaten rice.

It is a simple and healthy meal recipe, which can be made within minutes and can be served for any occasion.

It is generally served as it is but tastes better when topped with fresh coconut or even with a combination of farsan or mixture.

How to make it?

• Add 1 tsp sugar and ¾ tsp salt on soaked poha and mix gently.
• In a large kadai heat 2 tbsp oil and roast 2 tbsp peanuts on low flame. Roast until the peanuts turn crunchy. keep aside.
• In the same oil, splutter 1 tsp mustard, 1 tsp cumin, pinch hing and few curry leaves.
• Now add 1 onion, 2 chilli and saute well, Until onions shrink slightly without browning.
• Further , add ¼ tsp turmeric and saute well.
• Add soaked poha and mix gently until everything is combined well.
• Cover and simmer for 5 minutes or until the flavours are absorbed well.
• Also, add 2 tbsp coconut(optional), 2 tbsp coriander and 2 tsp lemon juice. mix gently.
• Enjoy kanda poha topped with some sev.

How to make this?

Stuff Garlic Bread⚡️

Stuffed Garlic Bread can be served with ketchup or mayonnaise along with some soda or can be eaten as it is.

To make the Dough:
- 1 cup All-Purpose Flour
- 1 Tsp Sugar
-1/4 Tsp Baking Soda (Khane wala soda)
- 1/2 Tsp Baking powder
- 1/2 Tsp Mixed Italian herbs
- 2 Tbsp Sour curd (khatta dahi)
- 1 1/2 Tsp Oil
- 1/4 Cup Milk (at room temperature)
- 2-3 Tsp Water
- Salt to taste
(Knead and Rest your dough for approx 4-5 hours)

To make garlic butter:
- 3 Tbsp Salted butter (at room temperature)
- 1/2 Mixed Italian herbs
- 1 Tsp Crushed garlic
- Some chili flakes

For filling:
- Chopped Coriander
- 50 gm Mozzarella Cheese
- Boiled sweetcorn
- Chopped Capsicum
- Chopped Onion

TIPS & VARIATIONS TO MAKE BEST STUFFED CHEESY GARLIC BREAD -
1. Do not forget to add sugar ,to the mixture.Sugar acts as a catalyst which kicks start the fermentation process.
2. You can also use warm water instead of warm milk.
3. Corn meal is optional but this is secret ingredient used in Dominos to make garlic bread crust crispy.
4. Proofing time(Raising the dough) in a normal bowl at counter top takes 2 hours and I generally made the dough 1 day before.
5. Always preheat oven for 10 min before baking.
6. I have used only mozzarella cheese here but you can use blend of both Mozzarella and Cheddar Cheeses.
7. You can also use either active dry yeast or instant yeast. I like to use Sour Curd only.

Happy Ganesh Chaturthi❤️

Try this easy and tasty modak recipe, with just Suji/rava, milk powder and milk.

How to make Suji Mava Modak?

* Add 1 cup of milk powder and 1/2 cup of milk in a pan, mix it well until no lumps left, make sure gas is not on.
* Now, on the flame and cook on low flame for 5 min and now add 1/2 cup roasted suji(roast suji in different pan and mix it in the mixture)
* Add Elaichi powder, 1 tbsp ghee, 4-5 strands kesar(optional)
* Mix it well until consistency became thick like dough and ghee is released.
* Transfer it to a bowl and allow to Cool it. Make sure it is warm and not completely cool.
* Roll it in a ball shape and start pinching the upper part and shape it like a cone.
* From sides, use a fork and put incision very lightly and it’s ready.

Note: You can store it in fridge for a week.
