Foraging Time!

I had a great day in the woods with some help from my Dad and brother foraging ramps and some mushrooms. The Pheasantback we found was all over on tree stumps throughout the woods. We used good harvesting practices by leaving mushrooms behind so that they continue to produce in subsequent years. Same logic applies to the ramps we harvested. The other mushroom pictured were Turkey Tail mushrooms.

Jalapeño Cheddar Foccaccia Bread

This was so tasty! It is definitely a must try recipe. I just took my normal recipe and dimpled in the pickled jalapeño slices and shredded cheese.

Nashville Hot Turkey Sliders!

Using up the last of our turkey meat for this recipe was sad but we will hopefully fill it back up this spring with more meat.

This was a great way to make turkey good and approachable for newbies to wild game. Try this one out!

Mississippi Pot Roast with Venison Neck meat

Man this turned out great! It was a great alternative to a typical pot roast flavor with the pickled banana peppers in there. I made my own au jus gravy for the roast, stealing my recipe from the french dip sandwhiches and thickening it into a gravy with flour.

Definitely try this out on your next roast!

Happy Easter to everyone and their families as we celebrate this wonderful day. The tomb is rolled away and the grave is empty! Our sins are all accounted for once and for all as Jesus defeated death, sin, and the power of the devil of the cross. Hallelujah!

Venison French Dip Sandwhiches

We made a couple of leg roasts into french dip sandwhiches and boy were they good! The au jus made with our own venison broth made it even better! The roast was just baked in the oven with a rub of garlic and herbs on it to a internal temp of 130° F. it came out perfectly done the whole way through. Highly recommend

Back to sourdough baby!

After a very long break during hunting season we have finally made our way back to sourdough. I was nervous the starter was not going to work since I hadn't fed it in so long. Luckily, it only went dormant and a couple feedings had it back in tip top shape.

To start off this sourdough season, we went back to a staple Italian Herbs and Cheese. Then we went a different direction and tried venison bacon dried thyme and sage from our garden and some mozzarella. They were both very good!! I plan on putting that venison bacon in more loafs in the future!

Its good to be back!
