Chowdah

Its gettin a little cool out, so i made some chowder on vacation with my family. We had a bunch of random s**t in the fridge to use so its not traditional but it was very delicious. My bad on the janky filming setup.

Late Night Eats: Trying the Irish Spice Bag - Irelands favorite late night snack - made easy thanks to the Crispi Dual Zone air fryer.

Spice Blend (eyeball it if you want - i did):
-1 tablespoon Chinese 5 spice
-2tsp sugar
-5 to 10 sichuan peppercorns depending on spice tolerance. These are included in 5 spice so if you cant find them dont beat yourself up over it. Just increase chili flakes and white pepper amounts.
-1tsp white pepper
-1tsp black pepper
-1tsp chili flakes
-1tsp garlic powder
-1tsp dried onion/onion powder
-1tsp turmeric
-1/2tsp curry powder
Food process and salt to taste

Curry Sauce (again, eyeballing ok):
Spoon or two of butter
1 shallot
1 small apple
1 carrot
2-3 cloves garlic
1+ tbsp curry powder (taste and adjust as you go)
1tbsp sugar
1tsp black pepper
1tsp white pepper
1tsp turmeric
1tsp cumin
Spoon tomato paste
1 cup chicken stock
A splash of malt vinegar
A couple splashes worcestershire
Splash of water mixed with a small spoon of cornstarch
Salt to taste

Sautee solid ingredients and spices in butter until softened, add tomato paste and toast, then add chicken stock, blend, add splashes of malt vinegar and worcestershire, let come to a simmer, add cornstarch slurry, reduce until coating back of spoon, season with salt and curry powder to taste.
