Here is today’s game day special! It includes ziti bake with ricotta and mozzarella, meatballs (8) and Italian sausage in marinara, Caesar salad, and a loaf of garlic cheese bread. It is all 100% house made by yours truly!  From the meatballs and sauce to the croutons and Caesar dressing and everything in between! It is delicious. You will love it. It is available for pick up after 3 PM but feel free to call your order in right away. Please let us know when ordering if you would like to pick it up hot and ready or if you would prefer to take it home cold so you can easily bake it at another time. Here is the granola recipe that I have used for years. I put it in everything. It is what I have been putting a top the Chia seed pudding that you guys have been loving. It is not super sweet so if you prefer sweeter granola, just add extra coconut sugar or swap that out for brown sugar altogether. It is hearty and delicious. It makes a lot so if you want to try a smaller portion, just cut it in half. Enjoy!🥰😘

Bigfoot’s Favorite Granola

Ingredients
*8 cups old-fashioned oats
*2 cups oat bran
*1 cup wheat germ
*1 cup ground flax
*1 cup walnuts or pecans
*1 cup almonds sliced
*2 cups shredded coconut
*3 teaspoons sea salt
*3 teaspoon ground cinnamon
*1 1/4 cup coconut oil
*1/2 cup avocado oil
*1/2 cup maple syrup
*1/2 honey or agave
*1 cup coconut sugar
*3 teaspoon vanilla extract

Instructions
Preheat oven to 350 degrees. Grease/spray a couple of large cookie sheets.
In a large mixing bowl, combine the first 7 ingredients.
In a med pot over med heat add the oils, syrups, agave, vanilla, sugar, salt, and cinnamon. Stir and bring to a boil. Pour over mix in bowl and mix well, until everything is evenly coated. Pour all of this onto your prepared pans and use a spoon/spatula to spread it out evenly.
Bake about 35 minutes stirring every 10 minutes and rotate the pans 1/2 way thru. Remove from the oven and let the granola cool completely. Break up any clumps. Store the granola in an airtight container at room temperature. Enjoy with on its own or w your favorite yogurt, milk or chia seed pudding!
Note: this recipe is very forgiving. You can add or substitute the nuts for your favorite kind including pumpkin or sunflower seeds. You can also add dried fruit or chocolate chips after it is completely cooled

I have 2 breakfast specials for you this morning! On complete opposite ends of the spectrum as far as healthy goes lol. I have my Chia seed pudding, which will only be available through tomorrow and then I’m gonna do another one of my favorite breakfasts starting Monday. My other breakfast special this morning is a churro breakfast sandwich lol!! Bacon, egg, and cheese is stuffed between two cinnamon sugar churros. I truly have something for everyone lol. I hope you guys have a  wonderful weekend!!❤️❤️

Our Story

Captain’s Corner is located in Paradise right next to Smithville Lake. We have so much to offer including great food, ice cream, gas, live bait, ice, and your overall general needs in our store section. We are known for our amazing cheeseburgers in Paradise! Paradise MO, first established as Gosneyville in 1832, was soon renamed Paradise, as it was said to be “as near to the real paradise as some people will ever get”. The original Paradise General Store was opened in 1926 across the street from us, by Ep Griffin. 1n 1983 Clyde and Jennifer Holdsworth reopened the general store and in 2004 built this current building and moved it over here. The original building still remains across the street, and operates as an event venue. There have been several additions and a few changes over the years here, however, it continues the tradition of being the place where people gather to sit and talk, a neighbor is a friend, and even if you are alone, you will never ben lonely in Paradise.

We are Seth and Katherine Wald, and we own and operate Captains Corner, together w our 4 children (2 sets of twins) Tristan, Sidney, Helaina, and Izabelle. We are also grateful for our 2 year round full time employees, and the handful of local kids as our summer help. We love this business and the people who come through our doors. We hope that you enjoy your meal and time here in Paradise and we are so glad that you stopped in.
