We made this decision yesterday and I filmed this video in one shot, a few hours afterwards. So, what you’re seeing here is immense gratitude, grief, excitement for a new future without feeling weighted down, and a woman finally allowing her inner child to feel safe to say “no, this isn’t working for me anymore”. So please be kind. 🥹❤️ I know I’m crying a lot throughout this series, but this is how I process emotions and you’re seeing that in real time.

We want to thank you so much for three incredible years in this community. I have gotten to know so many of you and wish I could give you hugs in person. Maybe that will actually happen soon? 🥰 I believe when we are brave enough to let something go, beautiful things are allowed to move in. And that’s what we feel like is happening currently with the final piece of allowing Sourdough Sparrow to die and let go of the past. Which, includes our only income at the moment, but we’ve always figured it out and have been blessed by so many, so there’s no need to fear.

Now moving forward, we are beyond thrilled to announce the new development of Amanda Hansen (where I’ll be posting from now on). A place of education, fresh-milling einkorn, recipes, new courses & cookbooks. We’ll also be selling local baked goods like our incredible 100% fresh milled browned-butter discard s’mores cookies (DM me if you’re local to Utah and I’ll hook you up) in-person classes, and retreats here in Utah and France (at the farm we source our Regenerative Einkorn from).

I want this space to feel like you’re sitting at the table with me, talking about life, sharing your most inner and honest thoughts and creating incredible ancestral baked goods together. I hope you choose to follow along. It might look very different than what you saw here at Amanda Hansen | Sourdough Mentor, but that’s kind of the point. 😅😘❤️

I have posted everything in the shop if you’d like to stock up on some Eden’s to give as gifts or keep for yourself (she lasts at least a year in her pouch before rehydrating) or grab the last physical cookbooks, kits, and etc. Comment SHOP and I’ll send you the store link.

I’m naturally impatient and somewhat of a space case with six kids at home for the summer. So 48 hours and loads of high quality fresh milled Einkorn + organic bread flour was wasted. 👎🏻 Normally, I would NEVER throw bread away, but it made our stomachs bloat until I looked six months pregnant (even after toasting slices) so I knew there was no saving them 😩.

Here’s what I did wrong:

❌ Didn’t feed my starter (Eden) enough times to be nice and strong before I used her for bread. Usually, I recommend feeding 2-3x out of the fridge with a 1:2:2 to support strength to your natural yeast baked goods. I only did once and she was too acidic, hence the underproofing.

❌ Didn’t let my dough bulk rise enough on the counter either before my fridge ferment, or after the fridge ferment when I shaped and stuck them in a glass 9x5 loaf pan. I usually always let my sandwich breads double in size in the pan, but this time I just stuck it directly in the oven without proofing. BIG MISTAKE.

Yes, I failed over the weekend, but it’s okay. There will always be mistakes to learn from, I just hope this lessens your own. 😂😘

Share with a sourdough bestie so they don’t make this mistake either…because no one wants to throw away loaves!!

BIG hug, little kiss.

⚠️ I NEED YOUR HELP!! ⚠️ PART 1 | Redoing our 17-year old daughters room with potential black mold

Sophie is our only girl and the oldest of 6 kids (5 boys). Since she was 12 she has contracted a number of auto immune diseases and really struggled with her mental health. Being the only girl can get a little overstimulating with five brothers at home so she spends a lot of time in her room, attempting to block out the noise. IYKYK. 🤪

My baby sister, Carly, recently moved has back to Utah and has helped me see how similar she and Sophie in so many ways; they’re both Aquarius’s. She has inspired me to want to focus more on Sophie’s room, to make it more of a “peaceful girly sanctuary”.

However, since we started we have run into a number of hiccups.. (like possible black mold) which is why I need your help!

Please comment your recommendations for companies who help with mold remediation, cute furniture, non-toxic bedding, or cutesy decorations so we can make this amazing for her.

Thanks babes,

Xo
