Berry season is all about eating strawberries, blueberries, and cherries until you get tired of them (but don’t eat too much or you’ll feel uncomfortable). I baked two batches of beautiful bagels to go with them. I had to admire them for a while before eating them.
Strawberry bagels are sandwiched with cream, and blueberry bagels are sandwiched with blueberry cheese. They both taste sour and sweet, more like eating fruit desserts😋

Bagel is still my usual recipe:
🍓Pink bagel dough/pink bagel (🥯x6):
High-gluten flour 300g
Sugar 10g
Cactus fruit powder 3g (optional for coloring)
Yeast 2.5g or fresh yeast 7.5g
Ice water 170g
Butter 12g
Salt 5g
🫐Blueberry bagel dough/blueberry Bagel (🥯x6):
300g high-gluten flour
10g sugar
120g frozen blueberries (for use after thawing)
2.5g yeast or 7.5g fresh yeast
80g ice water
12g butter
5g salt
🥯Bagel general steps:
1. Knead the dough materials (except butter and salt) to form a rough film, add butter and salt and knead until there is a uniform thick film
2. Divide into 6 equal parts, round, cover with film and refrigerate for 30 minutes
3. Shape
4. Ferment at 32 degrees for 30 minutes
5. Boil water, 25 seconds per side, water temperature around 90 degrees
6. Oven in the middle and lower layers of the flat oven at 200 degrees for 18 minutes (cover with tin foil in the middle to maintain the original color)
