Healthy Burritos π©π½βπ³π¨π»βπ³
1.) Chipotle Adobo Chicken:
In a mixing down use the following ππ½
1 can of chipotle pepper adobo, can chop and add peppers too
2 cloves minced garlic
1 tsp onion powder
1 tsp salt
2 tsp cumin
1 tsp black pepper
Juice of 2 limes
Add 1LB of chicken thighs (can use chicken breast for leaner purposes, however, chicken thighs made these burritos taste more like Chipotle since that is what they use) and let marinate for at least one hour, cook chicken until done, and finish with searing the chicken.
2.) Cilantro Lime Crema:
Using your blender add the following ππ»
1 cup crema (or sour cream)
Juice and zest of 1 lime
1-2 JalapeΓ±os
1 clove of Minced garlic
1 tsp of Onion powder
Salt and pepper to taste
Blend until smooth, and add water to desired consistency.
3.) Cilantro Lime Rice π:
Cook rice and let cool slightly, add the juice of 1 lime and 1 handful chopped of chopped cilantro and mix.
4.) Sauteed Veggies π«:
Heat olive oil in a 12-inch skillet over medium-high heat. Saute crisp veggies: Add bell peppers, onion, and whatever other veggies you prefer, and Saute for 4 minutes (toss just occasionally so it can brown slightly).
Then you add all of your fixings to your tortilla, roll your burrito π― and sear it on each side for a few seconds. Enjoy!
