Even though they brighten porches and star in pies, pumpkins are quite extraordinary! 🎃🧡 They are packed with flavor, full of nutrients, and are very versatile. Try making the most of the whole pumpkin with these three simple ideas:
1️⃣ Roasted Pumpkin Seeds
After scooping seeds from your pumpkin, rinse and dry them well. Toss with olive oil and a pinch of salt, then roast at 300°F for 30–40 minutes, stirring halfway. Try smoked paprika, garlic, or chili for a twist. Pumpkins seeds are full of protein, fiber, and healthy fats. A crunchy, nutrient-packed snack!
2️⃣ Simple Pumpkin Curry
Sauté onion and garlic in coconut oil, then stir in curry paste, pumpkin purée, and coconut milk. Add chickpeas or chicken and simmer for 15 minutes. Serve over rice for a warm, comforting bowl that’s rich in flavor, fiber, and pumpkin deliciousness!
(Pro tip: homemade pumpkin purée is easy — roast, scoop, and blend!)
3️⃣ Pumpkin Spice Syrup
Combine 1 cup water, 1 cup brown sugar, 3 tbsp pumpkin purée, and warm fall spices like cinnamon, nutmeg, and ginger. Simmer for 5–10 minutes until it thickens to a syrupy consistency, then strain and chill. Drizzle over coffee, pancakes, waffles, or whatever your heart desires.
