My adopted niece Kaylee said that she missed my enchiladas after I posted my niece Brooklynn's enchiladas. She had made them for her birthday. Us, girls, and our Mexican birthday dinners. 😆 I wrote down the recipe for my niece, and said that they should look similiar to this picture, but with a lot more cheese. 💕
Creamy Chicken Enchiladas
Ingredients:
1 (16 oz) Sour Cream
1 Family Size (22.6 oz) or 2 (10.5 oz) Cream of Chicken Soup*
1 (4 oz) can Green Chilies, diced**
10 pk Soft Taco Flour Tortillas***
1 (16 oz) Fiesta Blend Shredded Cheese*
3 chicken breasts, diced
Salt & Pepper
2 Tbsp Cooking Oil
Cooking Spray
Instructions:
1. Preheat oven to 350°F.
2. Spray a 9×13 glass baking dish with cooking spray, set aside.
3. In a large skillet, add the oil, chicken, and salt and pepper, to taste. Cook until no longer pink, and a little brown.
4. Remove chicken to a bowl, and cover with a paper towel to keep warm.
5. Add the sour cream, green chilies and cream of chicken soup to the same skillet. There should be some juices left from the chicken. Whisk it all together on low heat. Be careful not to burn it. After it's mixed together turn off the heat, and let it set.
6. Place a little bit of skillet mixture in the 9×13 baking dish
7. Microwave the Tortilla until they're soft, don't over microwave them.
8. Assemble the enchiladas by putting some diced chicken and cheese on the tortilla, then roll it. Don’t stuff them too full. Then place it in the 9×13 baking dish, with seam side down. Repeat until all ten of the tortillas are used. They should all fit in the baking dish.
9. If there is extra chicken left, add the chicken and juices to the skillet mixture. You can reheat, or just stir them into the mixture.
10. Pour skillet mixture over the enchiladas, making sure you cover all of the enchiladas.
11. Add the remaining cheese to the top of the enchiladas. You can use more or less cheese depending on if your preference to cheese. We had mice in our house that thought more cheese the better! 😆
12. Place in the oven, and cook for 20 minutes, or until the cheese has started to brown, and is hot and bubbly. 13.Serve with beans and rice.
* I used Great Value (Walmart)
**Hardly ever put these in because the family didn't like them. I love them!
