Looking for a new breakfast favorite? These Power Pancakes are a tasty family staple packed with whole grains, chia seeds, pumpkin, and plenty of room for your favorite additions. 🥞

Ingredients: 🧺
• 1/2 cup all purpose flour
• 1 cup whole wheat flour
• 4 tbsp chia seeds
• 1 tbsp baking powder
• 1/2 tsp salt
• Cinnamon to taste
• 1 egg
• 1/2 cup water
• 1 cup milk, dairy or non-dairy
• 1 tsp vanilla
• 4 tbsp canned pumpkin
• 2 tbsp olive oil
• 3 tbsp melted butter
• 1/4 honey, more or less to taste
• Optional additions like chocolate chips, blueberries, apples, or banana

Directions: 📝
1. Whisk all dry ingredients together.
2. Add all wet ingredients except the melted butter and mix until just combined. Add the melted butter and mix quickly.
3. Spoon the batter into a warmed, oiled pan. Flip, serve, and enjoy!
