How do y’all feel about using stainless steel spatulas on your cast irons?
I have a black plastic spatula that I used to use to scrape the leftover gunk off. But I read online that metal spatulas work really well with cast iron without the toxic chemicals being put into the air from melting plastic.
So I bought this one from Old Country Kitchenware.

I came across mention of this a couple of months ago. I finally got around to making it. It is a dish from western Virginia called Cheese Slaw. It is credited to a caterer from Roanoke. There are a couple of variations online but they only vary in ingredient quantities. After it chilled, we tried it with wavy potato chips and it was very good. We're going to try is as a topping for burgers soon. It's only 5 ingredients, Swiss cheese, pickled banana peppers, jalapeno pepper, green onions, and mayo.

I snagged this at a flea market a few days ago. The guy thought it was only good for a flower pot, so I stole it for cheap. 🌷🌺💐 I had to bite my tongue to not laugh because I knew he was so off base! Look at my baby now!!!
Yes…lots of work but so worth it to me! 😊

How I did it.
*I started by soaking it in vingar water for several hours.

How to Clean Rust Off of Your Cast Iron

Step One: Rinse and Wash
Place pan upside-down in sink and sprinkle with baking soda. Spray with a bit of water and add a few pumps of your preferred dish-washing soap.

Step Two: Scrub
Use a scrub brush to remove rust and debris. (Tip: a scrub brush will allow you to get into the crevices and etchings on the bottom of the pan better than a regular scrub pad.)

Step Three: Add Baking Soda & Afterwards course Salt
Go over your pan again, this time cleaning by adding baking soda to the mix and a scrub pad for added scouring. If needed I then scrub with course salt.

Step Four: Dry
Rinse your pan, ensuring all soap and baking soda is gone, and allow to dry thoroughly.

How to Re-Season Your Cast Iron Pan
The hesitancy home chefs have to clean a cast iron pan is valid. Scrubbing will have removed the pan's natural patina along with the rust, but thankfully, you can re-season it. Here's how.

Step One: Apply Fat
Start by using a paper towel or rag to rub a layer of shortening (like Crisco) over both sides of the pan.

Step Two: Set
Then, place the pan upside-down on a large sheet pan and bake in a pre-heated 350-degree oven for one hour. When an hour is up, turn the oven off; leave pan inside until cooled completely, then remove.

Tips for Maintaining Your Cast Iron's Quality

Now that your pan is cleaned, seasoned, and ready to use, here are a few of Ross's tips for keeping it in tip-top condition: After each use, don't reach for the dish soap; instead, rub the pan with coarse kosher salt to remove cooking debris and apply a thin layer of shortening or oil if desired. And if your cast-iron cookware has a lid, always store it separately—never on top of the pan—to prevent humidity from building up and creating rust.

Chicken dressing just like my Mamaw always made. Boil whole chicken. Make homemade cornbread. Crumble cornbread and add shredded chicken, celery, onion, bell pepper, fresh garlic, salt, pepper, and poultry seasoning. 2 cans of cream of chicken and about 2 cups of broth from your chicken. Bake in preheated oven at 350 until browned on top.

Tomato gravey cooked in cast iron skillet. First cooked bacon in the skillet & then used the grease to make the gravey. ** I just can not believe all the comments on this simple meal. Its a Southern thing.** Recipe added: cook your bacon, then pour off all bacon grease till just the bottom of skillet is covered. Lower heat to med-low. Sprinkle 3-4 Tablespoons of Self Rising flour on top & stir, stir, stir. Stir till light brown. When brown as you want it to be add 1/2C water & stir like crazy till well combined. When well combined, add 1 can of diced tomatoes, salt, & pepper. Stir till well combined. Turn heat off & enjoy.(Some people add milk instead of water. It is NOT a sauce & NOT Spaghetti sauce & NOT for pasta. It's for biscuits, toast, rice, &/or taters. Many people eat it for breakfast.)

Doesn't look like much, but these sliders are so good my family wishes I made them 8 days a week! I use rolls from the grocery bakery (I don't use the Hawaiian rolls cause I don't like that touch of sweet with this but this would work too), and then some ham sandwich meat with swiss and cheddar cheese. What makes them so delicious tho is the topping, I brush on a mix of 1/2 cup melted butter, tablespoon of stone ground mustard, a teaspoon of onion powder and a teaspoon of Worchestershire sauce. Some people add poppy seeds but my sister can't have those, so I leave that out. I put them in my air fryer for 3 minutes at 400⁰ and lord have mercy they are delicious!

I didn't want to cook on this 96 degree day. So I made some chicken salad with canned chicken. All I had to do was boil some eggs. I know some may have an issue with canned chicken. That's fine. But we like it occasionally and its quick.
