Bacon Wrapped Pork Tenderloin Recipe
Stuffed with Whiskey-Soaked Apples, raisins, Walnuts,
Served with Red Wine Demy Sauce
Instructions
1. Preheat oven to 350 Fahrenheit.
2. Butterfly or roll cut pork tenderloin. Once cut, cover pork loin in plastic wrap and tenderize with a meat tenderizer on the flat side through the plastic
3. Make stuffing: Melt butter or oil in a saucepan, add garlic, onions, apples, walnuts and raisins, sautΓ©ing for 2-3 minutes, or until onion is semi-soft. Add thyme, cinnamon, Salt & Pepper, then Whiskey, flambee to burn of the alcohol. Remove from heat.
4. Place the pork tenderloin slab on top of the sliced bacon, then place the stuffing mixture in the middle of the pork tenderloin. Season everything with pepper and salt. Roll the bacon and pork tenderloin and secure tightly. Place it in a 9x13 inch baking dish sprayed with non-stick spray.
5. Bake the pork tenderloin for 20 min on 350 Fahrenheit, or until the middle center of pork tenderloin reaches at least 145 degrees Fahrenheit.
6. Once done, allow it to cool for 5-10 minutes. Slice, serve & enjoy.
Ingredients
β’ 1 Pork Tenderloin (2-3 lbs. in weight)
β’ 8 slices of bacon
β’ 3 tbsp butter or oil
β’ 1 tsp finely chopped fresh garlic
β’ 1 tsp finely chopped fresh thyme
β’ 1 tbsp finely chopped yellow or white onions
β’ 1/2 tsp each salt and pepper (less salt if using salted butter)
β’ 2 cups of finely chopped apples, I used Granny Smith apples)
β’ 1/2 cup finely chopped walnuts
β’ 1/2 cup dried golden raisins
β’ 1/2 cup Whiskey
