Mac and cheese

16 oz elbow macaroni, cooked (or other tubular pasta
6 tbsp unsalted butter
1/3 cup all purpose flour
3 cups whole milk
1 cup heavy whipping cream
4 cups sharp cheddar cheese shredded
2 cups Gruyere cheese shredded
salt and pepper to taste
1/2 cup panko crumbs
2 tbsp butter melted

1. Preheat oven to 350F. Lightly grease a large 3 qt or 4 qt baking dish and set aside. Combine shredded cheeses in a large bowl and set aside.
2. Cook the pasta one minute shy of al dente according to the package instructions. Remove from heat, drain, I leave mine in the strainer until it’s time to toss it in the sauce.
3. Melt butter in a deep saucepan, dutch oven, or stock pot (I use the same pot I boiled the noodles in)
4. Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.
5. Gradually whisk in the milk and heavy cream until nice and smooth. Continue whisking until you see bubbles on the surface and then continue cooking and whisking for another 2 minutes. Whisk in salt and pepper.
6. Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and continue whisking until creamy and smooth. Sauce should be nice and thick.
7. Stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.
8. Pour half of the mac and cheese into the prepared baking dish. Top with remaining 2 cups of shredded cheese and then the remaining mac and cheese.
9. In a small bowl, combine panko crumbs and melted butter. Sprinkle over the top and bake until bubbly and golden brown, about 30 minutes.
Serve immediately.

Budget friendly? Not really but it was my birthday girls request and Mama made it happen! If you try it feel free to share! 🫶🏼

Recipes for The Chili and Chili Queso Pasta

Recipes are suggestive, change what you need to fit your family’s needs or preferences.

Chili Recipe: I made a HUGE batch

5lbs ground turkey, browned
3 packets of chili seasoning
2 cans chili beans
1 can chili ready tomatoes
1 cup of water (give or take)

Seasonings I add to my meat while cooking is adobo

I’m really bad at measuring, I go by sight or taste. To me recipes are just suggestions

After I brown the turkey, I add it to the crockpot with all the other ingredients and cook it on high for 4 hours or low for 6.

Queso:
1 pkg white American cheese
1 can diced green chilies
As much milk as you need to thin it out to your liking. I start with 1/3 cup and go from there. Let it all melt together on med/low heat
Add seasonings you like.

Chili Queso Pasta:

I used maybe 2ish cups of leftover chili, warmed up
1 1/2 boxes of rotini pasta
Enough water to cover the noodles
Bring to a boil then cover and reduce. Cook for 10 minutes, check the noodles and see if they’re done or need more water.

Once done, add the queso, stir and serve!

Yes, I know it’s NOT goulash. This is what my youngest (Caboose) calls it.
