Make some soup with me 🫶🏼

Green chiles soup
Pound of ground beef
1 onion
2 cans pinto beans (drained)
1 can rotel
1 4 oz can green chili
2 cups of beef broth
1 tsp chili powder

*I added black pepper, onion powder, Trader Joe’s chili lime seasoning. I added a few cloves of garlic. I also added fresh cilantro when serving!

Making my teenage sons Chicken Cobbler for the lunches this week 🫶🏼

4 cups chicken
2 tbs butter (for casserole dish)
1 tbs butter (for seasoning mixture)
2 cups frozen veggies
2 cups milk
2 cups chicken broth
1 can cream of chicken
1/2 cup of cheese
Red lobster cheddar bay biscuit mix
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
Bake on 350 for 45-50 minutes until golden brown

The way I have been able to keep my weight off is being prepared, consistent and staying motivated. I love starting off Monday prepping a few meals and snacks so that I make good choices throughout the week. I prepped Korean Carrot Salad, fruit, and Chicken Salad!

Chicken salad like pasta salad… just replace pasta with 4 cups of rotisserie chicken! So yummy! I plan on making this lots of different ways this summer 🌞

Chicken Salad
4 cups of chopped rotisserie chicken
1 yellow bell pepper diced
1 red bell pepper diced
14 oz can of artichoke hearts ;drained and diced
16 oz can black olives; drained and diced
1 cup banana peppers diced
1 cup of shredded carrots

Dressing
1/2 c olive oil
1/2 c white vinegar
3 tbsp of banana pepper juice
1 tsp basil
1 tsp oregano
3 cloves of diced garlic

Traveling hits different these days!! I remember years ago praying that my seatbelt would fit!!! Crossing my fingers I didn’t have to ask for a seat belt extender!!! Hoping my body wasn’t going to overflow into the seat next to mine! In this moment I am so grateful for my health❤️ It’s never too late to get FIT!! Much love and happy CATurday 🫶🏼
