Every year I take my girls on a mother/daughter date before school starts. I let them pick out some outfits for school, get their supplies and we have lunch at the restaurant of their choice. I always enjoy this time with them even if it is a bit exhausting. lol. Today we started things off with my 13 yr old. We shopped until she dropped. 🤣 She wanted Indian for lunch but they were closed. So then she asked for Texas Roadhouse and they were closed. Then we tried a place called Rice Paper and they were closed!!!! 😒 Finally, she settled on Jasmine because she wanted dumplings. I got chicken lettuce wraps. They were ok…a bit greasy but the flavor was good. She found some clothes at Plato’s & American Eagle and it was all tax free. 🙌🏼

The BEST Grilled Chicken & Cilantro Lime Fried “Rice”
This is one of our new family favorites!! We all loved it so much…even my pickiest kids. I made cauli rice for myself and regular white rice for the fam but I did sneak half of my cauli rice into their rice so they could get some veggies too. They had no clue there was cauliflower in their rice. 🙌🏼

RECIPE - Makes 6 servings
6 boneless skinless chicken thighs
1/4 cup avocado oil
2 Tbsp liquid aminos
2 Tbsp Worcestershire sauce
2 Tbsp golden monkfruit sweetener
1 Tbsp balsamic vinegar
1 Tbsp lemon juice
1 Tbsp Dijon mustard
1 sprig of rosemary, chopped
1 tsp garlic powder
1 tsp black pepper
dash of paprika

*rice of choice. I used Green Giant Cauliflower Medley for myself to keep it low carb
handful of chopped cilantro
1 lime
1 Tbsp liquid aminos

DIRECTIONS:
1. Add the chicken and marinade ingredients to a large ziplock bag and shake to combine.
2. Marinate for at least 30 minutes.
3. Cook on a griddle or skillet over medium heat until chicken reaches 165 degrees F. *Flip halfway through.
4. After flipping the chicken halfway through, add the steamed rice to the griddle.
5. To the rice, add some chopped cilantro and fresh lime juice. *Squeeze some lime juice on the chicken as well.
6. Add about 1 Tbsp of liquid aminos to the rice and mix it all together. Enjoy!

Greek Cucumber Salad
This salad made for a delicious & refreshing lunch!

INGREDIENTS:
1-2 cucumbers, sliced
1 cup grape tomatoes
6 oz low fat feta cheese
2 Tbsp fresh dill, chopped
2 Tbsp fresh parsley, chopped
salt & pepper to taste
Kalamata olives

Dressing:
3/4 cup avocado oil
Juice from 1 lemon
3 Tbsp red wine vinegar
1 Tbsp grey poupon dijon mustard
1 Tbsp honey
2 tsp minced garlic
salt & pepper to taste

DIRECTIONS:
1. Add the sliced cucumbers into a large bowl along with the tomatoes, feta, olives, parsley and dill.
2. Season with salt and pepper to taste and mix well.
3. Drizzle on desired amount of dressing and stir. Enjoy!

Reubens
I have been making these low carb Reubens for years and they’re definitely a family favorite! If you don’t want to use corned beef, they’re also delicious with Turkey. 🙌🏼😋

This recipe calls for my Sugar Free Thousand Island Dressing which can be found along with the Reuben recipe in my new cookbook! ❤️

RECIPE - Makes 6
INGREDIENTS:
3 Cutdacarb flatbreads
1 lb corned beef, chipped
6 Tbsp sugar free thousand island dressing👇🏼
12 slices of baby Swiss cheese
1 cup sauerkraut
avocado oil

STEPS:
1. Working with just 1 flatbread at a time, lay it horizontally on your work surface.
2. On the long side closest to you, add on 3 slices of Swiss cheese side by side.
3. Using a slotted spoon, add about 1/3 cup of sauerkraut on top of the cheese followed by 2 Tbsp of thousand island.
5. Next add on 1/3 of the corned beef.
6. Roll it up tightly and then cut it in half.
7. Repeat two more times.
8. Heat a skillet over medium heat and add in a couple tablespoons of avocado oil.
9. Brown the Reubens on all sides until golden brown. *They cook really fast so don’t leave them unattended. 😊

NUTRITION: 1 Reuben | 5.8g net carbs | 11.5g total carbs | 3.6g fiber | 405 calories | 28g protein | 28g fat | 0.6g sugar | 2g sugar alcohol

SUGAR FREE THOUSAND ISLAND:
Mix together:
1/2 cup mayo
1 Tbsp sugar free ketchup
1 Tbsp dill relish
1 Tbsp pickle juice
1.5 Tbsp powdered monkfruit sweetener
2 tsp apple cider vinegar
1/4 tsp onion powder

Mint Chocolate Chip Ice Cream 🍦
It’s so easy to make delicious ice cream at home! You can make this with or without an ice cream maker.

RECIPE - Makes 2 servings
INGREDIENTS:
1 cup heavy cream
1/2 tsp vanilla extract
1/2 tsp peppermint extract
1 ChocZero peppermint crunch chocolate square
1/4 cup allulose *this is used to keep the ice cream soft. Other sweeteners work but will turn rock hard after freezing.

DIRECTIONS:
1. In a freezer safe bowl, whisk the heavy cream, Allulose and extracts for 2 minutes.
2. Chop the chocolate squares into small bits.
3. If not using an ice cream maker, stir the chocolate in, place a lid on the bowl and freeze until solid.
4. If using an ice cream maker, be sure the churning bowl has been frozen for 24 hours and then pour the mixture into it.
5. Churn for about 20 minutes, add in the chocolate bits and then churn another 5 minutes.
