Breakfast was simple but filling—eggs with a scoop of cottage cheese for extra protein, some leftover broccoli (because hey, fiber is fiber), and sourdough toast with homemade blueberry jam.
Lunch was an omelet with turkey sausage and mushrooms from Big Ed’s in Raleigh—so good.
Dinner was at Chick-fil-A in Mebane, NC a cob salad with light vinaigrette.
We spent the day out at the parks and museums—everything was just beautiful, full of little wildflowers here and there. We’re headed back now, tired and thankful. Hope you’ve had a good day too. 🌼
