🔥 Parrillada con Salsa (Serves 4)
🍖 Grilled Meats (Parrillada Mixta)

You can customize the protein selection, but here’s a traditional and balanced mix:

Meats:

1 lb skirt steak or flank steak

1 lb pork chorizo (or longaniza)

4 bone-in chicken thighs or drumsticks

1 lb short ribs or beef ribs

Optional: sweetbreads (mollejas) or blood sausage (morcilla), for authenticity

Marinade (optional for steak/chicken):

2 tbsp olive oil

2 tsp garlic (minced)

1 tbsp oregano

1 tsp paprika

Juice of 1 lime

Salt and pepper

Instructions:

Season all meats with salt and pepper (or marinate up to 4 hours in the fridge).

Grill meats over medium-high heat:

Chicken: ~7–8 min per side (until 165°F)

Sausages: ~15–20 min total

Steak: ~4–5 min per side for medium-rare

Ribs: Slow-grill or pre-bake, then finish on grill

Rest meats before slicing.

🫑 Grilled Vegetables

2 bell peppers (halved)

1 red onion (thick slices or halved)

2 zucchini (sliced lengthwise)

4 ears corn (optional)

Drizzle with olive oil, salt, and grill until charred and tender.
🥣 Salsa Criolla (Argentinian-style Relish)

A tangy, colorful salsa to pair with meats.

Ingredients:

1 red bell pepper, finely diced

1 small red onion, finely diced

1 tomato, diced

2 tbsp olive oil

1 tbsp red wine vinegar

Salt and pepper to taste

Chopped parsley (optional)

Instructions:

Mix all ingredients.

Let sit 15–30 min for flavors to meld.

🌿 Chimichurri Sauce (Herb Salsa)

A must-have for parrillada.

Ingredients:

½ cup parsley, finely chopped

3 cloves garlic, minced

2 tbsp red wine vinegar

½ tsp red pepper flakes

½ cup olive oil

Salt and black pepper

Instructions:

Combine all ingredients.

Let rest 30+ minutes for best flavor.

🍞 Optional Sides:

Grilled bread or baguette slices

Papas criollas or roasted potatoes

Mixed salad with lemon vinaigrette

🧂 Serving Tips:

Serve everything family-style on a large platter or wooden board.

Let guests spoon chimichurri and salsa criolla onto their meats.

🍽️ All-American BBQ Platter (Serves 4)
🍖 1. BBQ Pork Ribs

Ingredients:

1 rack baby back ribs (about 1.5–2 lbs)

1 tbsp brown sugar

1½ tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

½ tsp black pepper

½ tsp salt

Pinch of cayenne (optional)

½ cup BBQ sauce

Instructions:

Prep ribs: remove membrane, pat dry.

Rub with spice mix and wrap in foil.

Bake at 300°F (150°C) for 2–2.5 hours.

Unwrap, baste with BBQ sauce, then grill or broil until caramelized.

🍗 2. BBQ Chicken Thighs

Ingredients:

4 bone-in, skin-on chicken thighs

½ tsp each salt, pepper, garlic powder, and smoked paprika

½ cup BBQ sauce

Instructions:

Season thighs, grill over medium heat 6–7 min/side.

Brush with BBQ sauce and grill another 5 min until internal temp is 165°F (74°C).

🌽 3. Grilled Corn on the Cob

Ingredients:

4 ears corn

2 tbsp melted butter

Salt and pepper

Optional: chili powder, lime, grated cheese

Instructions:

Brush with butter, season.

Grill for 8–10 minutes until charred, turning occasionally.

🫘 4. Baked Beans

Ingredients:

1 can (15 oz) baked beans

2 slices bacon, chopped

¼ onion, diced

1 tbsp brown sugar

1 tsp mustard

1 tsp molasses or maple syrup

Instructions:

Cook bacon and onion, add remaining ingredients.

Simmer 15 minutes.

🥬 5. Coleslaw

Ingredients:

3 cups shredded cabbage mix

1 small carrot, grated

¼ cup mayo

1 tsp apple cider vinegar

½ tsp sugar

Salt and pepper

Instructions:

Mix slaw and carrot.

Combine dressing, toss, and chill 30 min.

🍞 Optional Add-ons:

Cornbread (buy or bake a small skillet)

Pickles & sliced onions

BBQ sauce on the side
