Chicken Tikka Masala Recipe 😍

Ingredients:
For Chicken Tikka:
500g boneless chicken (cut into cubes)
½ cup thick yogurt
1 tbsp lemon juice
1 tbsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp garam masala
½ tsp cumin powder
½ tsp coriander powder
Salt to taste
1 tbsp oil
1 tbsp besan (gram flour) (optional)
1 tbsp butter (for grilling)

For Masala Gravy:
2 tbsp oil
1 tbsp butter
1 bay leaf
1 cinnamon stick
2 green cardamoms
1 onion (finely chopped)
1 tbsp ginger-garlic paste
2 tomatoes (pureed)
1 tbsp tomato paste (optional)
1 tsp red chili powder
½ tsp turmeric powder
1 tsp coriander powder
½ tsp cumin powder
1 tsp garam masala
Salt to taste
½ cup fresh cream
2 tbsp chopped coriander leaves
1 tsp dried fenugreek leaves (kasuri methi)

Instructions:
1. Marinate the Chicken:
In a bowl, mix yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric, garam masala, cumin powder, coriander powder, salt, oil, and besan.
Add the chicken pieces and coat well. Cover and refrigerate for at least 1 hour (overnight for best results).

2. Cook the Chicken Tikka:
Heat a grill pan or tandoor, apply butter, and cook the marinated chicken on medium heat until charred and cooked through (about 8-10 minutes).
Alternatively, you can bake at 200°C for 15-20 minutes, turning once halfway. Set aside.

3. Prepare the Masala Gravy:
Heat oil and butter in a pan, add bay leaf, cinnamon, and cardamoms.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté until raw smell disappears.
Pour in tomato puree and tomato paste. Cook until the oil separates.
Add red chili powder, turmeric, coriander powder, cumin powder, garam masala, and salt. Mix well.
Add grilled chicken pieces and mix. Pour in fresh cream and stir.
Crush kasuri methi between your palms and add it to the gravy.

4. Final Touch & Serve:
Simmer for a few minutes until the flavors blend.

Garnish with chopped coriander leaves.
Serve hot with naan, roti, or steamed rice.

Air Fryer Pizza Bombs 🥰

Ingredients:
For the dough:
1 can refrigerated biscuit dough (8 pieces)
¾ Cup shredded mozzarella cheese
24 slices pepperoni (3 per bomb)
½ cup pizza sauce (plus extra for dipping)

For the garlic butter topping:
3 tablespoons melted butter
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons grated Parmesan
fresh parsley, chopped (for garnish)

Directions:
Preheat the air fryer to 350°F for about 3-5 minutes while you assemble the ingredients.

Flatten each biscuit into a 4-inch circle using your hands or a rolling pin.

Fill the centers with 1 teaspoon of pizza sauce, 3 slices of pepperoni, and a generous pinch of shredded mozzarella. Do not to overfill.

Carefully pinch the edges of the dough together and roll into a tight ball. Make sure no filling is exposed.

In a small bowl, combine the melted butter, garlic powder, Italian seasoning, and Parmesan.

Brush the bombs with half of the garlic butter mixture before cooking.

Place the sealed dough balls in the air fryer basket, seam side down, leaving a little space between each one.

Cook at 350°F for 8-10 minutes or until golden brown and puffed up.

🔸 For the cake:
– 4 tbsp granulated sugar
– 1/2 cup vegetable oil
– 1 cup milk
– 1 egg
– Pinch of salt

– 2 packets baking powder (14g)
– 7g vanilla
– 1 1/2 cups all-purpose flour

🔸 For the chocolate sauce:
– 1/2 cup vegetable oil
– 1/2 cup granulated sugar
– 1/2 cup milk
– 2 tbsp unsweetened cocoa powder
– 7g vanilla

Instructions:

In a large bowl, whisk together the egg, sugar, oil, milk, and vanilla until well combined.

Add the cocoa and salt, then gradually sift in the flour and baking powder. Mix until smooth and slightly runny.

Grease and flour your cake pan. Pour in the batter.

Bake in a preheated oven at 180°C (350°F) for 30–35 minutes, depending on your oven.

While the cake bakes, prepare the chocolate sauce. In a saucepan over low heat, mix all sauce ingredients until the sugar dissolves and the mixture thickens slightly.

2 large eggs, beaten
1 tablespoon milk
1 ½ cups seasoned breadcrumbs (or panko for extra crunch)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
Vegetable oil, for frying
For the Nashville hot coating:
4 tablespoons hot oil (from frying)
1 teaspoon cayenne pepper
1 tablespoon brown sugar
1/2 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon chili powder
Pinch of salt
Freeze the mozzarella sticks for 30 minutes until they’re firm. This will help prevent them from melting too quickly during frying.
Place the flour in one bowl. In a second bowl, whisk the eggs with milk. In a third bowl, combine the breadcrumbs, salt, pepper, paprika, and garlic powder.
Dip each frozen mozzarella stick into the flour, then egg, then breadcrumbs. For an extra crispy coating, dip again in egg and breadcrumbs. Freeze again for at least 20 more minutes to firm up before frying.

8 wooden skewers, soaked in water for 30 minutes to prevent burning

▫️ For the Garlic Parmesan Marinade:

4 garlic cloves, minced

1/2 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of half a lemon

Optional: 1 teaspoon red pepper flakes (if you want extra heat)

Chicken Cordon Bleu (Baked or Fried)
Ingredients:
For the Chicken:

4 boneless, skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

8 thin slices of ham

8 thin slices of Swiss cheese

½ cup all-purpose flour

1 egg

1 tablespoon water

1 cup plain breadcrumbs

½ cup vegetable oil (if frying)

Optional Creamy Dijon Sauce:

2 tablespoons butter

1 tablespoon cornstarch

1 cup milk

1 tablespoon Dijon mustard

1 tablespoon brown sugar

1 teaspoon apple cider vinegar

Directions:
Prep the Oven
If you're baking, preheat your oven to 375°F (190°C).

Flatten the Chicken
Place the chicken breasts between sheets of plastic wrap and pound them to about ½ inch thickness.

Season
Sprinkle salt and pepper over both sides of each chicken breast.

Add Filling
Place 2 slices of ham and 2 slices of Swiss cheese on each breast. Roll them up tightly and secure with toothpicks.

Coat the Chicken
