Made this last night and it was really good so I thought I'd share it here.
Fajita Chicken Casserole -
Ingredients
4 cups shredded cooked chicken (about 3 large breasts)
2 cups instant rice
1 (10.5-ounce) can cream of chicken soup
1 cup sour cream
1 cup frozen diced onion and bell pepper blend
1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained
1 1/2 cups chicken broth
1 (1.12-ounce) packet fajita seasoning
1 (8-ounce) shredded Mexican blend cheese (about 2 cups)
Instructions
Lightly spray a 9x13" casserole dish with nonstick cooking spray. In a large bowl, combine the chicken, uncooked rice, cream of chicken soup, sour cream, frozen onion and bell pepper, tomatoes with chilies, chicken broth, fajita seasoning, and about half of the cheese. Mix until well combined. Pour the mixture into the prepared dish and spread it evenly. Cover with tin foil and bake in the oven for 35 minutes at 350 degrees. Uncover, sprinkle the rest of the cheese on top and bake another 10 minutes.

Lazy Chicken Pot Pie
2-cans of cream of chicken
2 12oz -cans of chicken (or could shred your own)
1 12oz -bag of frozen peas and carrots
1 tsp -garlic powder
1 tsp- onion powder
1 can of crescent rolls or the dough sheet
Salt and pepper to taste.
(I personally didn’t add extra salt because of using the canned products. Also feel free to use fresh or switch it up. I’m sure it would be even better. )
Preheat oven to 375 degrees Fahrenheit
Mix chicken, cream of chicken, veggies and seasoning in baking dish.
Bake in the oven for 30-40 minutes until bubbling.
Open crescent dough and flatten out on top of cooked mixture in the pan and bake for another 10-15 minutes until golden brown.
P.S- This was 1 year old approved by my son. So that’s also a win. 😂💕 Hope your family enjoys it too.

Smokey Sloppy Joe and Provolone!
2 Lbs ground beef cooked and drained
2 cans sloppy joe sauce
( we use Del Monte it has a Smokey bbq flavor ) or you may add a little liquid smoke to your sloppy Joe sauce
2 boxes Texas Toast garlic bread with cheese
Shredded mozzarella cheese/ or sliced provolone
Pre heat oven to 375°
Brown the ground beef and drain, mix in sloppy joe sauce and simmer for 10 minutes stirring occasionally. On a cookie sheet place garlic toast and bake for 5 minutes. Remove toast from oven and spoon on meat mixture then top with shredded mozzarella or sliced provolone cheese and bake for 7 minutes. I also made two on garlic keto toast.

Meatyyy cheesyyy chip dip!!
1. Lb burger
1. Lb breakfast sausage
A whole box velveeta cheese ( velveeta is best... generic has a different taste)
1 can rotel tomatoes
*fry both burger and sausage in two separate pans... drain grease off of both
*I spray my crockpot with non-stick
* pour both meat into crockpot
* add rotels
* slowly add cubbed velveeta every hour while stirring.
* cook on low for 6 hours.
* enjoy with any style tortilla chip you'd like!!

PEPPERONI PIZZA GRILLED CHEESE
Ingredients
1 tbsp. unsalted butter
4 slices hearty Bread
4 slices mozzarella cheese, ⅛-inch thick
18 slices pepperoni cooked in microwave for 20 seconds and grease dabbed off
For the Garlic Butter
3 tbsp. unsalted butter
¼ tsp. fresh or dried parsley
¼ tsp. Italian seasoning
¼ tsp. garlic powder
⅛ tsp. salt
Instructions
In a medium skillet set over medium-low heat, add the butter and melt. Place two pieces of toast side by side.
To each slice of bread, add a slice of mozzarella, 9 pepperoni, and another slice of mozzarella. Place remaining slices of bread on top.
Cook on each side for about 3 minutes or until the cheese is melty.
Meanwhile, make the garlic butter. In a small microwave safe bowl, add the butter. Heat until melted. Stir in parsley, Italian seasoning, garlic powder, and salt.
Using a pastry brush, brush on both sides of grilled cheese. Cook on each side for 30 seconds. Remove, sprinkle with parmesan cheese and dip in your favorite marinara, if desired.

🤎Cinnamon Tortilla Chips.
•Flour Tortilla’s.
•6 Tbsp Butter. (Melted.)
•1/2 Cup Sugar.
•1 tsp Cinnamon.
So Easy! So Tasty! Smells So Good!
Preheat oven to 350°. Spray baking sheet. (I used parchment paper.) Mix sugar and cinnamon together in a small bowl. Put tortilla on baking sheet. Spread melted butter on tortilla. Sprinkle on sugar, cinnamon mixture. I used pizza cutter to cut tortilla into triangles, as if cutting a pizza. Use as many tortilla’s that you need to use up butter, sugar and cinnamon mixture. Bake 8-10 minutes.

1 Cucumber
1.5 cup of grape tomatoes
4oz mozzarella pearls
1 small/med red onion
2 T olive oil
1 T Balsamic Vinegar
Dash of garlic powder or a fresh garlic clove
Salt to taste
Chopped fresh basil

The McCrib... Homemade McRib..1 Banquet Backyard BBQ Meal.. 1 Deli Roll.. lightly toasted in a skillet. 2 Kroger Fastfood Style Pickles.. they nailed it, and some sliced onion.
I bought BBQ sauce, but the sauce the rib patty is packed in is tasty and I kept it. Roughly $2.25 a sandwich. 1/2 of what McDonald's charges and fun to make at home.

4-6 large tomatoes
1 pound ground beef
2 tablespoons taco seasoning
4 cups lettuce, chopped
1/2 cup corn *fresh or frozen
1/4 cup sharp cheddar cheese *optional
1 tablespoon cilantro, chopped
Instructions
Preheat oven to 375.
Slice the top off the tomatoes and scoop out all the pulp. Place in a baking dish.
Brown the ground beef in a large saute pan. Once cooked through, add the taco seasoning.
Add the lettuce and corn. Cook until the lettuce is wilted and everything is fully mixed together.
Stuff the tomatoes with the beef mixture. Use any leftover beef in the bottom of the baking dish.
Sprinkle with cheese.
Bake for 15 minutes or until cheese is melted. Top with the cilantro and serve.
