Creamy Tomato Spinach Tortellini π

A rich and velvety pasta dish made with cheese-filled tortellini, fresh cherry tomatoes, and spinach in a luscious garlic tomato cream sauce. Perfect for a quick yet indulgent meal!
Ingredients:
For the Pasta:
10 oz (280g) cheese tortellini (fresh or frozen)
1 tbsp olive oil
2 cloves garlic, minced
1 Β½ cups cherry tomatoes, halved
1 cup fresh spinach
1 tsp dried Italian seasoning
Β½ tsp red pepper flakes (optional, for a little kick)
Salt & black pepper, to taste
For the Creamy Tomato Sauce:
1 tbsp butter
Β½ cup heavy cream (or half & half for a lighter option)
Β½ cup crushed tomatoes (or tomato sauce)
ΒΌ cup grated Parmesan cheese
ΒΌ cup pasta water (reserved from boiling tortellini)
Instructions:
Cook the Tortellini:
Bring a large pot of salted water to a boil.
Cook tortellini according to package instructions.
Reserve ΒΌ cup of pasta water before draining.
Prepare the Sauce:
Heat olive oil in a large skillet over medium heat.
Add garlic and sautΓ© for 30 seconds until fragrant.
Add cherry tomatoes and cook for 3-4 minutes until they start to soften.
Stir in Italian seasoning, red pepper flakes, salt, and black pepper.
Make it Creamy:
Reduce heat to low and add butter, crushed tomatoes, and heavy cream.
Stir and let simmer for 2-3 minutes.
Add Parmesan cheese and stir until melted.
Combine Everything:
Add spinach and cooked tortellini to the sauce.
Stir in reserved pasta water to loosen the sauce if needed.
Serve & Enjoy:
Garnish with extra Parmesan and fresh basil.
Serve hot and enjoy the creamy goodness!
