Bilal Mamdani discovered pandemic baking during the COVID shutdowns. He created a Basque-style cheesecake, a dessert that originated in Spain. “Which is a very creamy cheesecake. It's crust-less, so it's naturally gluten-free,” said Mamdani. He eventually got so good at making the dessert that he decided to launch his own business called Crème.

Bilal Mamdani of Maple Grove recently launched Crème, which specializes in creamy, Basque-style cheesecake that is sold online.

If at first you don't succeed, try, try again. That appears to be the direction the city of Brooklyn Park will take as it seeks ways to pay for a proposed expansion of the city's Community Activity Center. The city sought bonding at the state legislature over the last two years for the expansion, but to no avail. It appears the city will now try again in 2026.

The start of the school year is a little more than a month away and teachers are already making plans to welcome kids back. But sometimes teachers must spend their own money to get their classrooms ready. It's why Twin Cities-based AdoptAClassroom.org is offering help.
