🥗 Greek Chicken Bowl 🐓✨

Ingredients
For the Chicken:
🐓 1 lb chicken breast or thighs, cut into bite-sized pieces
🧄 3 cloves garlic, minced
🍋 Juice of 1 lemon
🫒 2 tbsp olive oil
🌿 1 tsp dried oregano
🧂 Salt and black pepper, to taste
For the Bowl:
🍚 2 cups cooked quinoa, rice, or couscous
🥒 1 cup cucumber, diced
🍅 1 cup cherry tomatoes, halved
🧅 1/4 cup red onion, thinly sliced
🫒 1/3 cup Kalamata olives, sliced
🧀 1/4 cup crumbled feta cheese
For the Tzatziki Sauce:
🥒 1/2 cup Greek yogurt
🧄 1 clove garlic, minced
🥒 1/4 cup grated cucumber (squeeze out excess water)
🍋 1 tbsp lemon juice
🌿 1 tbsp fresh dill, chopped
🧂 Salt and black pepper, to taste
Optional Garnishes:
🌿 Fresh parsley or dill, chopped
🥄 Drizzle of extra olive oil
Instructions
1️⃣ Marinate the Chicken:
In a bowl, combine minced garlic, lemon juice, olive oil, oregano, salt, and pepper. Add the chicken pieces and toss to coat.
Marinate for at least 30 minutes (or up to 2 hours for more flavor).
2️⃣ Cook the Chicken:
Heat a skillet or grill pan over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until golden and fully cooked. Remove from heat and set aside.
3️⃣ Prepare the Tzatziki Sauce:
In a small bowl, mix together Greek yogurt, minced garlic, grated cucumber, lemon juice, dill, salt, and pepper. Refrigerate until ready to use.
4️⃣ Assemble the Bowl:
Divide the cooked quinoa, rice, or couscous among bowls. Top with grilled chicken, diced cucumber, cherry tomatoes, red onion, olives, and crumbled feta.
