Every day is pizza day! I've been on a kick of trying different types of dough alternatives for a quick, but hopefully healthy meal. 🍕🍕

Recently, I visited our local India food market and got some Naan. While a little bit higher calorie compared to tortillas or pita, loving the protein ratio in it!

This pizza uses fresh basil and tomatoes from my tiny balcony garden and parmesan.

Eating vegan doesn't have to be hard or bland, but also doesn't always have to be super healthy. Make your tastebuds go wild. This is one of my summer go to salads made with fresh corn, avocados, red onion, carrots, crumbles, and cilantro over a bed of lettuce. I made a dressing with some fresh salsa, lime juice, and sour cream! Honestly takes less than 15 minutes to make!

I know 2020 hasn't been the best for most, including myself. I had so many plans from more recipes to a podcast ().

In the midst of the pandemic, I started working from home and started to focus more on the food I enjoy to eat and trying to focus on self care.

2021 will come with more videos, more content, and just more of me. :) thank you everyone for understanding. And more of .a.peno.
