🌼 When my family starts feeling sick, this is the food I make… 🌼
Fresh carrot juice for an immunity boost + Korean-style carrot pancakes made from the leftover pulp 🥕🥞 Nothing goes to waste and my daughter can’t stop asking for more 🥰
✨ Carrot Juice Recipe
• 2 large carrots 🥕
• 1 apple 🍎
• 1 cup coconut water 🥥💧
• 1 tsp honey 🍯
👉 Blend together & strain for smooth juice.
✨ Korean-Style Carrot Pancakes
• Leftover carrot pulp (from juicing)
• 1 egg 🥚
• 2 tbsp flour
• Pinch of salt & pepper
• A little green onion or parsley 🌱 (optional)
👉 Mix and pan fry with 100% avocado oil for that healthy crisp! 🥑✨
🛠️ Kitchen Must-Haves I Used:
✔️ 100% Avocado Oil (light, healthy & perfect for frying)
✔️ Silicone spatula (no scratches on my pan + easy flipping)
✔️ Blender/juicer for the juice mix
