Lemon Violet Garden Refresher
Light, floral & perfect for springtime sipping
Ingredients:
4 cups cold water
1 cup freshly squeezed lemon juice (about 4–6 lemons)
1/2 cup honey or sugar (adjust to taste)
1 lemon, thinly sliced
1/4 cup fresh mint leaves
Edible purple violets or pansies (rinsed)
Ice cubes
Instructions:
1. In a pitcher, combine the lemon juice and honey or sugar. Stir until fully dissolved.
2. Add the cold water and stir again.
3. Drop in lemon slices, mint leaves, and edible flowers.
4. Add ice and stir gently to mix.
5. Let sit for 10–15 minutes to infuse, then serve chilled with a wooden spoon for a rustic touch.
Tip: Garnish glasses with a lemon wheel and a violet for extra charm!

Tender Chicken in a Rich Parmesan Cream Sauce
Ingredients:
4 boneless, skinless chicken breasts
1 packet Italian dressing seasoning mix
1 cup chicken broth
1 (10.5 oz) can cream of chicken soup
1 (8 oz) block cream cheese, cut into cubes
1 cup grated Parmesan cheese
1 cup heavy cream
8 oz penne pasta
1 cup fresh spinach, finely chopped
Salt and pepper, to taste
Fresh parsley, for garnish
Directions:
Place the chicken breasts in the slow cooker and sprinkle the Italian dressing seasoning evenly over them.
Pour the chicken broth and cream of chicken soup over the chicken, making sure it’s fully coated. Add the cubed cream cheese on top of the mixture.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken becomes tender and easy to shred.
Shred the cooked chicken directly in the slow cooker, stirring it into the creamy mixture until well combined.
Add the grated Parmesan cheese and heavy cream, stirring until the sauce becomes smooth and velvety.
While the chicken mixture cooks, prepare the penne pasta according to the package directions until al dente. Drain and set aside.
Stir the cooked pasta and chopped spinach into the slow cooker, ensuring everything is well mixed. Season with salt and pepper to taste.
Cover and let the dish sit for 10–15 minutes to allow the spinach to soften and flavors to meld together.
Serve warm, garnished with freshly chopped parsley for a burst of color and flavor.

3 cups quick cooking oats
1 cup peanut butter
1 teaspoon vanilla extract
Directions:
1 - In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.
2 - Add quick cooking oats, peanut butter, and vanilla; mix well.
3 - Working quickly, drop by teaspoon size onto waxed paper, and let cool.

Ingredients:
2 tablespoons olive oil
1 pound ground beef
½ yellow or sweet onion, diced
Salt and pepper, to taste
2 teaspoons Worcestershire sauce
1 green/red bell pepper, stem and seeds removed, diced
8 ounces elbow macaroni, uncooked
1 cup water
14.5-ounce can of beef broth (or 2 cups beef broth)
½ cup 2% milk
2 ounces cream cheese, cut into small cubes
½ cup mozzarella cheese, shredded
6 to 8 ounces provolone cheese, sliced and torn into pieces
Chopped fresh parsley for garnish 🌿
Instructions:
Brown the Beef: Heat olive oil in a 12-inch skillet over medium heat. Add ground beef and diced onion. Cook until the meat is no longer pink and the onions are soft. Season with salt and pepper to taste. 🥩
Add the Veggies: Stir in the Worcestershire sauce, diced pepper, macaroni, water, and beef broth. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until the pasta is cooked and most liquid is absorbed. 🔥

Ingredients:
2 cups cooked shredded chicken 🍗
1 avocado, diced 🥑
1/2 cup shredded cheddar cheese 🧀
1/4 cup Ranch dressing 🥗
1/4 cup chopped cilantro 🌿
1/2 teaspoon garlic powder 🧄
Salt and pepper to taste 🧂
4 large flour tortillas 🌯

Instructions:

1½ cups cornmeal
½ cup all-purpose flour
¼ cup sugar
1 tbsp baking powder
½ tsp salt
1½ cups buttermilk
2 eggs
⅓ cup melted butter or oil
Instructions:
Preheat oven to 375°F (190°C). Grease oven-safe bowls or jumbo muffin tins.
Mix dry ingredients, then stir in buttermilk, eggs, and butter.
Fill bowls halfway with batter (to allow space for hollowing).
Bake 18–22 mins or until golden. Cool slightly, then scoop out center gently to make a “bowl.”

1½–2 lbs beef stew meat
2 tbsp flour
Salt, pepper, garlic powder
1 tbsp oil

1 lb collards, chopped
1 smoked turkey leg or ham hock
1 small onion
2 garlic cloves

Instructions:

Add greens, reduce heat, cover and simmer 45–60 minutes until tender.
