Take your Catfish Tacos to a whole new level with 2gringos Chupacabra Rubs Cajun Blend!!! Woweee, that's a flavor-packed taco!!! Liberally season both sides of the Catfish filets with Cajun rub, place in a pan with half a stick of good butter, smoke over Royal Oak Charcoal natural briquettes on the 270 Smokers . (Too easy!!) Warm up a tortilla or wrap on the grill, slice up a few leftover jalapeno poppers, slather with your favorite mayo or sour cream, fresh salsa, lettuce, etc, and you are in for one mighty fine meal!! Pictures just don't do this justice!!! Alton Paris this was simply amazing!!!

Sunday is Family Day and you can bet this Jalapeno Popper Burger is the best burger in town, grilled on the over Royal Oak Charcoal natural briquettes! Fresh peppers from our Texas garden, smoked as classic poppers, bring the perfect level of heat to this grass fed, grass finished beef burger! Round it out with Pepper Jack cheese, bacon, avocado, grilled mushrooms, real mayo, homemade salsa, dill pickle slices, and Croix Valley One Rub...there's no need (or room!) for a bun!!!

Likely the highest compliment you can give to a seasoning is when the ribs are so fantastic they're all gone before you even think to take a picture!!! We paired our longtime favorite Ribnoxious by 2 Gringos Chupacabra BBQ Throw Down with Croix Valley 's new One Rub. No honey, no butter, no sauce, truly nothing but yellow mustard as a binder and these 2 rubs. Just absolutely AMAZING!!!!! Alton Paris Lu and Damon Holter ... not sure if you've ever even met but you worked magic in our smoker today!!! Thank you for all that you do to make our world delicious!!! 😋😋😋

We're having a tasty blast playing with this new line of sauces from Croix Valley!! Seven sauces ranging from smokey American classics to vibrant Tex-Mex flair. And at just $5.95 a bottle ($34.95 for a 7-pack!), you'll want to sn**ch these up!
We sampled the Spicy Bourbon, Sweet Peach, and Smokey Chipotle sauces with this grilled salmon tonight. All three were winners!! Later this week we'll be playing with the Midnight Molasses, Sweet Carolina Gold, Smooth Honey, and Hickory Brown Sugar sauces!

Not your average cauliflower!!! Smoke it or roast it, just be sure to season it first with Croix Valley Barbecue Boosters! We drizzled a bit of avocado oil on the head of cauliflower, liberally dusted with CV Garlic Booster and Spicy Booster (inside and out), and did a convection roast at 385 for roughly an hour. Delicious as is, dipped with Ranch (Terry's fav) or dipped with Panang Curry (Stephanie's fav)! 😋😋😋

Although it looks like our fireworks will be rained out tonight, we'll have another opportunity to celebrate tomorrow! Along with farmers markets, parades, concerts, and a hot air balloon festival, life in small town America is sweet indeed!
Ribs smoked on the 270GS by 270 SMOKERS over Royal Oak Charcoal all natural briquettes! Croix Valley One Rub on the ribs, 2gringos Chupacabra Rubs Ribnoxious and AnonymousQ Competition Cooking Team Disruption Spicy AP seasoned up the smoked beans. Homemade ranch potato salad, fresh corn, etc. And that peach pie??? Time for another trip o'er the mountain to pick more peaches!!! 😋😋😋

We ventured to Hudson, Wisconsin where Stephanie competed in a double ancillary at the 1st Croix Valley Intercontinental Cookoff! Simultaneous competitions in Europe and the USA! Stephanie placed 2nd in the "Anything Dutch Stroopwafel" competition with her Stroopwaffel Dessert Taco (homemade gluten-free spin on stroopwaffels with an infused cream caramel center, cheesecake, orange-infused dark chocolate, salty peanuts, etc, yum!) and 10th in Mac 'n Cheese with her charred poblano, pancetta, & Gruyere smoked gf mac 'n cheese! Croix Valley Garlic BBQ Booster was the perfect seasoning for the mac, all smoked on the 270 GS over Royal Oak Charcoal briquettes!

Many thanks to Lu and Damon Holter for creating an awesome event for the SCA Croix Valley family!! Congrats to all the cooks in Europe and the USA who heard their number called!

Even your pickiest guests will ask for seconds, trust me on this!!! Cedar plank warm-smoked Norwegian Salmon and grilled broccoli. Perfectly cooked over all natural briquettes from Royal Oak Charcoal!
Salmon was marinated and glazed in white wine, fresh ginger, tamari, & avocado oil. Smoke over indirect heat until internal temp registers 140F (or a bit higher, if preferred).
Simple ingredients, cooked with the best tools in the business!
