I have been sooo busy recently it has been all about very easy meals that I don’t have to put too much thought in to them but my IBS is not happy at the moment so I need to get back in to cooking properly again! So last night I made this spicy chicken & tomato pasta which absolutely hit the spot 👌🏼 is this going on your meal plan for next week?
To make this for 2 people you will need:
•100g dried pasta
•2 chicken breast diced
•1/2 onion diced
•10 plum tomatoes halved
•3 garlic cloves minced
•1tsp smoked paprika
•1tsp chilli powder
•1tsp cayenne pepper
•1tsp italian herbs
•Pinch salt & pepper
•1 knorr stock pot
•1tbsp sun-dried tomato paste
•150ml cream single or double is fine
•40g grated parmesan
•Bunch chopped basil
•1tsp chilli flakes (optional)
Place the pasta on to cook as per the packet instructions.
In a pan add the chicken, paprika, chilli powder, cayenne pepper & herbs then cook off for 5 mins on a medium heat.
Add in the onion and cook for another 5 mins.
Add in the tomatoes, stock pot, a ladel of pasta water & tomato paste then cook for another 5 mins.
Add in the cream, basil & parmesan stir well until combined turn the heat down and bring to a simmer.
Once the pasta is cooked drain it off reserving a bot of water to add to the sauce if it needs loosening up a bit more.
Add in the pasta and stir through until all of the pasta is coated.
For optional garnish sprinkle over the chilli flakes and some more fresh basil.
