                                            If you love tacos and pasta, this one-pot creamy taco pasta is a must-try! It’s cheesy, flavorful, and super easy to make. 🌮🍝
Ingredients:
1 lb ground beef (or turkey),1 small onion, diced, 2 cloves garlic, minced, 1 (10 oz) can Rotel (diced tomatoes with green chilies), 1 (8 oz) can tomato sauce, 1 packet taco seasoning, 2 cups beef broth, 2 cups uncooked pasta (rotini, penne, or shells), ½ cup plain Greek yogurt (or heavy cream), 1 ½ cups shredded cheese (cheddar or Mexican blend), Salt & pepper to taste, Cilantro or green onions for garnish (optional)
Instructions:
Cook ground beef in a large pan over medium heat until browned. Drain excess grease. Add diced onions & garlic, cooking until fragrant. Stir in taco seasoning, Rotel, tomato sauce, and broth. Bring to a simmer. Add uncooked pasta, cover, and cook on low for 12-15 mins, stirring occasionally. Stir in heavy cream for creaminess. Mix in shredded cheese until melted and smooth.
