🍝 Farmhouse Crockpot Meatballs & Sauce

This is one of those easy, comforting meals that makes the house smell amazing all day. Toss everything in the crockpot, let it simmer low and slow, and serve over pasta with a side of garlic bread for a simple farmhouse supper.

Ingredients

* 1 bag (32 oz) frozen fully-cooked meatballs
* 3 (28 oz) cans crushed tomatoes
* 1 (6 oz) can tomato paste
* 1/4 cup dry red wine* (Pinot Noir, Merlot, or Cabernet Sauvignon)
* 2 tablespoons dried minced garlic
* 2 tablespoons Italian seasoning
* 1 teaspoon black pepper or seasoned pepper)
* 1 tablespoon sugar (optional, to balance acidity)
* 1 teaspoon salt, or to taste
* Fresh parsley and grated Parmesan for serving (optional)

*The wine is optional but really adds a delicious depth of flavor to the sauce. If you prefer, substitute with 1/4 cup beef broth or water.

Directions

1. Add crushed tomatoes and tomato paste to a large crockpot.
2. Stir in the red wine (or broth/water), dried minced garlic, Italian seasoning, pepper, sugar (if using), and salt.
3. Add the frozen meatballs and gently stir to coat.
4. Cover and cook:
* LOW: 6–8 hours
* HIGH: 3–4 hours
5. Stir before serving and adjust seasonings if needed.
6. Serve over spaghetti, penne, or your favorite pasta.

Farm Wife Tips 🤍

✨ Add 1 diced onion for extra flavor. Chopped multi-color peppers are delicious too.

✨ We like mushrooms, so I add fresh mushrooms to slow cook in the sauce. It adds more bulk to the sauce to feed hungry bellies.

✨ Stir in 1/2 cup grated Parmesan during the last 30 minutes for a richer sauce.

✨ Serve with garlic bread and a simple garden salad.

✨ Leftovers freeze beautifully for a quick future meal.

Freezer Meal Option

Place the following in a gallon freezer bag:

* Crushed tomatoes
* Tomato paste
* Red wine (or beef broth)
* Garlic
* Italian seasoning
* Pepper
* Salt

Freeze flat.

When ready to cook, thaw overnight and pour into the crockpot. Add frozen meatballs and cook as directed.

Serves: 6

On this Flag Day, I’m thankful for the men and women who have served, sacrificed, and continue to protect this great nation. Their courage allows us to enjoy simple blessings like family gatherings, peaceful country roads, and the freedom to call America home. ❤️🤍💙

As Old Glory waves proudly in the breeze, may we never take those blessings for granted.

🌽🥓 Farmhouse Summer Corn & Bacon Pasta Salad

If summer had a side dish, I think this might be it.☀️

Sweet corn, crispy bacon, tender pasta, juicy tomatoes, cheddar cheese, and a creamy ranch dressing all tossed together in one big bowl of goodness.

It’s perfect for cookouts, potlucks, porch suppers, church picnics, or those evenings when it’s just too hot to spend much time in the kitchen.

Ingredients

• 12 oz rotini pasta
• 2 cups sweet corn (fresh, frozen, or canned)
• 1 lb bacon, cooked and crumbled
• 1 cup cherry tomatoes, halved
• 1 cup shredded cheddar cheese
• ½ cup red onion, finely diced
• ½ cup green onions, sliced
• 1 cup mayonnaise
• 2 tablespoons ranch seasoning
• Salt & pepper to taste

Directions

1️⃣ Cook pasta according to package directions. Rinse with cold water and drain.

2️⃣ In a large bowl, combine pasta, corn, bacon, tomatoes, cheddar cheese, red onion, and green onions.

3️⃣ In a separate bowl, stir together mayonnaise and ranch seasoning until smooth.

4️⃣ Pour dressing over pasta mixture and toss until well coated.

5️⃣ Season with salt and pepper to taste. Chill for at least 30 minutes before serving.

🤍 Farm Wife Tip: Sprinkle a little extra bacon and green onion on top just before serving for a pretty presentation.

🌿🥚 Farmhouse Egg Salad 🥚🌿

Simple, creamy, and perfect for sandwiches, crackers, croissants, or tucked into a lettuce wrap for a quick summer lunch or supper.

This version has a little more crunch and flavor from the extra celery and onion - - just the way many farmhouse kitchens make it. 🤍

Ingredients

* 8 hard-boiled eggs, peeled and chopped
* ⅓ cup mayonnaise
* 1 teaspoon yellow mustard
* 1 tablespoon sweet pickle relish
* ½ cup finely diced celery
* ¼ cup finely diced onion
* ½ teaspoon salt (or to taste)
* ¼ teaspoon black pepper
* ¼ teaspoon paprika

Directions

1. Place chopped eggs in a large bowl.
2. Add mayonnaise, mustard, relish, celery, onion, salt, pepper, and paprika.
3. Stir gently until combined.
4. Taste and adjust seasoning if needed.
5. Cover and chill for at least 30 minutes before serving.

🤍 Farm Wife Tip 🤍

If you’re making sandwiches, mash a few of the eggs with a fork before mixing. It gives the egg salad a creamier texture while still keeping plenty of chunks.
