A very easy but delicious caramelised onion and black bean stew! Hearty, cheap and perfect for this time of year
For 4 people:
2 large onions, finely sliced
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tosp wholegrain mustard
3 sprigs thyme
700g black beans, l used
200ml veggie stock if you're using other tinned black beans in water rather than stock
Natural yogurt to serve
Handful of parsley to serve
1 Heat a large glug of olive oil in a deep saucepan and add your onions, gently cook for 30 mins then add the soy, balsamic vinegar, thyme and mustard then cook for another 15 mins.
2 Next add your black beans, if you're using@boldbeanco then fill ½ the jar up with water and add this to the saucepan.
If not pour in your stock and then simmer gently for an hour, adjust seasoning before you serve.
3. Serve in a bowl topped with natural yogurt, parsley and a drizzle of olive oil.

IT'S CORN fritters with smashed avo and a leftover Romanesco sauce which I had made for a pasta dish!
Brunch fit for kings and they're
vegan! Serve these fritters with your fav dip and these become the best snack too! Enjoy
For around 6 corn fritters:
250g plain flour
1tsp baking powder
2 spring onions, finely chopped
1 tsp cumin
1tsp chilli powder
Small handful of parsley, finely chopped 1200g can of corn, drained and rinsed
180ml plant-based milk, l used oat
Combine all the dry ingredients in a big bowl and mix together.
Stir in the milk, and mix well, then add in the corn and mix until there are no more flour lumps. Season with salt and pepper
Heat a glug of veg oil in a non-stick pan, then add about a tosp of batter into the pan and cook for about 3 mins on each side until golden.
Pop the fritters on a plate lined with paper towels to absorb extra grease.
Then server with either your fav sauce or dips or smashed avo and and egg!

A healthy, easy, mid-week meal of grilled salmon and pesto veggies.
Simply
season your salmon and either pan fry or grill and then cook your green veggies (I used broccoli and beans) till still crispy and then mix in some lovely fresh pesto!
Homemade pesto bangs if you can! ? ? ? ^

A light Monday lunch to get the week started right - Leftover roast chicken and roasted peppers on a whipped feta bed with basil and a good drenching of olive oil. Scoop onto some crunchy bread if desired. Simples
