โGreen riceโ (Cแปm) is a type of traditional snack made from young sticky rice. After harvesting, the sticky rice grains are roasted evenly in a pan. Being green rice, the grains have a fresh green color and a sweet, nutty fragrance. Cแปm is a specialty in several Northern and Central provinces of Vietnam, with the most famous being Cแปm Lang Vong from Hanoi. Itโs often wrapped in lotus leaves, so when unwrapped, the aroma of young rice and lotus leaves blend harmoniously. The grains are chewy, sweet, and nutty, making Cแปm an unforgettable delicacy for many lovers.
High-quality green tea, when pan-roasted, often has an aroma similar to green rice. The tea liquor also has a bright, clear green color. Not only Vietnamese green tea, but green teas from other countries that are pan-roasted also have same aroma. For example, in China, there are pan-roasted teas such as Longjing and Huangshan Maofeng, while in Japan, thereโs Kamairicha, one of the rare Japanese green teas roasted in a pan.

The reason is that pan-roasted green tea contains certain compounds that are absent in steamed teas. One of the most prominent compounds is 2-Acetyl-1-Pyrroline. Besides of 2-Acetyl-1-Pyrroline, pan-roasted green tea also contains other compounds that create a โrichโ aroma, such as 2-ethyl-3,5-dimethylpyrazine, 2,3-diethyl-5-methylpyrazine, and 2-acetyl-2-thiazoline.
