Instructions :
•Blanch the pork bones, rinse them thoroughly, and simmer for 1–1.5 hours (or slow-cook for 3–4 hours) to make the broth.
•Peel and thinly slice the giant elephant ear stems, then rub them thoroughly with salt.
•Squeeze out all the excess water from the stems.
Add tomatoes and a few dracontomelon fruits into the broth.
Skim off any foam from the surface if needed.
• Boil the dry noodles or rice vermicelli until cooked, then drain and let them cool.
To make the patties: Finely chop the wild betel leaves. Mix them with minced pork, oyster sauce, seasoning powder, and an egg (to bind the mixture). Pan-fry the patties or brush them with oil and air-fry.
Season the broth with seasoning powder and MSG until it is slightly bold and flavorful.
Add chopped culantro to the broth.• Serve the hot broth over the noodles, and enjoy with the wild betel leaf patties and the raw herbs (shredded banana stalks, balm, chives, and basil).
