Crunchy, tangy, and loaded with bold garlic and fiery spice, these homemade pickles are a game-changer! Perfect as a snack, burger topping, or alongside sandwiches.
Ingredients 📝
6–8 small cucumbers (kirby or pickling cucumbers), washed and quartered 🥒
6 garlic cloves, smashed 🧄
2–3 fresh red or green chilies, sliced 🌶️
2 cups water
2 cups white vinegar
2 tbsp kosher salt
1 tbsp sugar
1 tsp black peppercorns
1 tsp mustard seeds
1 tsp crushed red pepper flakes (adjust for spice)
2–3 fresh dill sprigs 🌿
Instructions 🔪
1. Prepare the Jars:
Sterilize 2 large glass jars and lids by boiling them for 5 minutes. Let them air dry.
2. Pack the Cucumbers:
Tightly pack the cucumbers, garlic cloves, sliced chilies, and fresh dill sprigs into the jars.
3. Make the Brine:
In a saucepan, combine water, vinegar, salt, sugar, peppercorns, mustard seeds, and red pepper flakes.
Bring to a boil, stirring until the salt and sugar dissolve.
4. Pour the Brine:
Carefully pour the hot brine over the cucumbers, ensuring they’re fully submerged. Leave about 1/2 inch of space at the top.
5. Seal and Store:
Seal the jars tightly. Let them cool to room temperature, then refrigerate.
Allow the pickles to sit for at least 24–48 hours for the flavors to develop. For maximum flavor, wait 1 week!
