Lemon wedges, for serving
Instructions:
Preheat the oven to 400°F. Toss the potatoes with olive oil, paprika, Italian seasoning, salt, and black pepper. Roast for 25 to 30 minutes until golden and tender.

1 cup heavy cream
1 cup grated Parmesan cheese

Bake at 200°C / 400°F for 35–45 minutes, until golden and fully cooked.
Melt the butter and sauté the garlic.

Albóndigas en salsa de chipotle 🌶️🍅
Ingredientes
Para las albóndigas
500 g de carne molida de res
250 g de carne molida de cerdo
1 huevo
1/2 taza de pan molido
2 cucharadas de arroz crudo
2 dientes de ajo picados
1/4 de cebolla finamente picada
2 cucharadas de cilantro picado
Sal y pimienta al gusto
Para la salsa de chipotle
4 jitomates grandes
2 chiles chipotles adobados
1/4 de cebolla
1 diente de ajo
2 tazas de caldo de pollo
1 cucharadita de consomé en polvo
1 cucharada de aceite
Guarnición recomendada
Arroz rojo
Frijoles refritos
Tortillas calientes
Preparación
En un bowl mezcla la carne de res y cerdo con huevo, pan molido, arroz, ajo, cebolla, cilantro, sal y pimienta.
Forma albóndigas medianas y reserva.
Asa los jitomates, cebolla y ajo hasta que estén doraditos.
Licúa los jitomates con chipotle, cebolla, ajo y caldo de pollo hasta obtener una salsa tersa.
Calienta aceite en una olla y sofríe la salsa durante 5 minutos.
Agrega el consomé y acomoda las albóndigas dentro de la salsa.
Cocina tapado a fuego medio por 30–35 minutos hasta que las albóndigas estén suaves y bien cocidas.
Sirve calientes con arroz, frijoles y tortillas.
