Ski town lore always includes stories of people living in backyard chicken coops or other creatively converted spaces, sometimes without electricity or running water. It’s practically a rite of passage for 20-somethings chasing the ski bum dream. 🐓⁣

Nowadays, however, even people of means are choosing alternative housing, whether for freedom from a mortgage, to stick within a budget, or simply because they believe less really is more. Here in the Tetons, modern settlers are living out their dreams in custom digs that could fit into one room of today’s average American house. ⁣⁣

Katie Salsbury, of Intermountain Aquatics, Inc. and Landganics - Organic W**d Control, says her latest endeavor makes her feel like a mad scientist. 🧪⁣

In a shipping container next to her house, blue and red lights glow purple. The air smells humid and warm. Trays on a counter contain tiny germinating plants, and vertical columns of leafy green lettuce, kale, and a mix of herbs grow lined up in rows. A drip runs down the columns once every hour, and leftover moisture gets recirculated into the system. 💦⁣

Cattle Creek Ranch, Teton Valley, Idaho's only hydroponic farm, uses only five gallons of water a day to grow their CSA greens. 🥬⁣
