Grilled Chicken Breast in Creamy Peppercorn Sauce 🍛
INGREDIENTS 📝
500g Chicken Breast Fillets
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
1/2 Teaspoon Onion powder
1/2 Teaspoon Garlic powder
1/2 Teaspoon Paprika
Olive Oil, to Pan Fry

For the Sauce
1 Tablespoon Butter & Oil
4 Tablespoon Onion, finely chopped
3 Big Garlic Cloves, minced
1 Tablespoon Whole Black Peppercorns, crushed
1 Teaspoon Dark Soy Sauce
1/2 Teaspoon Plain Vinegar
1 Teaspoon Ketchup
1 Cup Chicken Stock
1/2 Cup Cooking Cream, at room temp
Salt to taste, if required

METHOD ✍️
1. Toast 1 Tablespoon whole Peppercorns in a pan for few minutes. Coarsely grind them.

2. In the same pan, Fry the Chicken Breast Fillets with few teaspoons of Olive Oil till Golden 6-7 mins per side and cooked through. Set them aside.

3. Add butter in same pan and fry the onions till Golden. Add the minced Garlic and freshly crushed Peppercorns. Add Soy sauce, Ketchup and Vinegar.

3. Add the chicken stock. Add salt if required. Note the stock already contains salt.

4. Simmer for 10 minutes to reduce. Add the Cream and simmer.

5. Place the fried chicken breast in the Sauce.

1 3/4 Cup | 2 Cubed Mangoes(550g), Frozen

1/2 Cup | 120g plain Greek Yogurt

METHOD ✍️
1. Cut two Ripe Sweet Mangoes into cubes. Arrange the pieces in a single layer on a freezer safe bag and place in the freezer until solid (3-5 hours). Slice a Ripe Banana and freeze in an airtight bag till frozen for a few hours.

2. In a Blender, Place the Greek Yogurt followed by half of the frozen mangoes and frozen bananas. Blend till smooth stirring in between with a spatula.Once smooth, add the remaining frozen fruits and blend till smooth.

If you are using a food processor, all the frozen cubes can be blended together.

3. Spread the mixture into an airtight chilled container, smooth the top, and freeze for 4-5 hours till it becomes scoopable.

METHOD ✍️
1. Chop around 2 Cups of Deseeded Watermelon into dices. Add Sugar.

2. Blend well. If any seeds present, strain it out. Insert the popsicle sticks first in the molds to prevent any leakage. Pour into the popsicle molds.

3. Freeze for 3-4 Hours or till firm. Once the top looks firm, Cover with a Cling Film to prevent ice crystals at the top surface.

Overnight Chia Rolled Oats for Weight Loss

½ Cup | 43g Rolled Oats
1 Cup Water or Low fat Milk or (Almond/Soy/Cashew milk)
1 Tablespoon Chia Seeds
1/2 Tablespoon Maple syrup(or Date Syrup/Sweetener/Honey)
1/3 Cup | 93g plain Greek Yogurt (I used Low fat)

1/2 Cup Mixed Berries (Fresh Blueberries, Strawberries & Raspberries)
Banana slices
Chopped Almonds, Walnuts /Pistachios
1/4 Teaspoon Cinnamon powder

METHOD ✍️
1. Soak Rolled Oats and Chia Seeds with Water or Milk of your choice. Mix well so that the Chia seeds are immersed in the liquid. Add Plain Greek Yogurt. Give it a mix. Add Maple Syrup or Honey or Date Syrup or Sweetener of your choice. Cover it airtight and let it rest Overnight Refrigerated. Stays good upto 5 days refrigerated.
If you need to consume it same day, then soak with hot water or milk. Let it rest covered airtight for at least 3-4 hours or till the chia seeds start swelling up.

2. After Soaking, the Chia seeds and the Rolled Oats will get Puffy and Soft. Either warm it up before serving or have it cold. I like to warm it up for few seconds in the microwave.

3. Just before serving, add some more Greek Yogurt if you wish and mixed berries of your choice. Fresh Blueberries and Strawberries helps in loosing weight.

4. Add Few Banana Slices, Cinnamon Powder and chopped Almonds, Walnuts and Pistachios. Drizzle with Dates Syrup/Maple Syrup/Honey or just add chopped Dates or Figs to sweeten your oats naturally.

One Pot Chicken Thighs and Rice Recipe 🍛

For Chicken
Chicken Thighs 500g
2 Teaspoon Brown Sugar
1 Teaspoon - Salt
2 Teaspoon - Sweet Paprika
1 Teaspoon Cayenne pepper/Red Chili
1 Teaspoon - Onion Powder
1 Teaspoon - Garlic Powder
1/2 Teaspoon - Pepper Powder
1/2 Teaspoon - Thyme
1 Teaspoon Olive oil

11/2 Cup Basmati Rice, Wash & SOAK 20 Mins

FOR the Rice
1 Tablespoon Butter
1/4 Cup - Chopped Onions
1 Teaspoon - Minced Garlic
The Reserved Seasoning
The Soaked Basmati Rice
1 Cup - Chicken Stock (Mix 1 Builion Cube + 1 Cup Hot Water)
2 Cups - Hot Water
Salt to taste
1 Teaspoon - White Vinegar/Lemon Juice
Fried Chicken Thighs

METHOD
1. Prepare a seasoning by mixing Brown sugar, salt, Paprika, Cayenne Pepper, Black pepper, Onion & Garlic powder and Thyme. Marinate the Chicken Thighs with Olive oil and then apply the seasoning. Reserve some of it for Rice.

2. Pan sear the Chicken Thighs till Golden brown on both sides using olive oil, around 5-7 mins each side. Keep them aside.

3. Wash and Soak Basmati Rice for atleast 20 mins

3. In the same pan, add Butter and saute chopped onions and minced garlic. Add the reserved seasoning.

4. Add the soaked rice after straining the water. Toast for 5-7 minutes on low heat.

5. Add Chicken Stock and Hot Water. Add Salt to taste. Add Lemon juice or vinegar. Place the fried chicken thighs. Cover cook on low heat for 15-20 minutes.

6. Garnish with chopped parsley or coriander leaves. Rest for 5-10 minutes before serving. Bon Appetite 🍽️🥰
