INGREDIENTS
2 Tablespoon All Purpose Flour/Maida
1.5 Tablespoon Sugar
1 Tablespoon unsweetened Cocoa powder ( I used Hersheys Special Dark)
1/8 Teaspoon Baking Powder
1/8 Teaspoon Salt
2 Tablespoon Milk
1 Tablespoon Oil
1/8 Teaspoon Vanilla Essence, optional
Few Chocolate chips, optional

METHOD

1. Mix all the Dry Ingredients in a Microwave Safe Mug, the All purpose flour, Sugar, Cocoa Powder, Baking powder and Salt.

2. Add the Room temperature Milk, Oil and Vanilla Essence. Whisk till no lumps remain. The Batter should not be too Thick, Add bit of Milk if the batter looks too Thick.

3. Fold in few chocolate chips optional but gives a great richer taste.

4. Microwave for a minute. While still hot, place few Chocolate chips on top. Let it rest for a minute before serving.

Learn how to make a Healthy Homemade Pizza loaded with the goodness of Whole Wheat flour/Atta and Protein rich Paneer/Cottage Cheese cubes in easy steps with minimal ingredients.

INGREDIENTS
Paneer Topping For 1 Pizza
100g Paneer cubes, diced small
1/2 Teaspoon Salt
2 Tablespoon Thick Yogurt/Curd
1/4 Teaspoon Turmeric
1/4 Teaspoon Cumin powder
1/2 Teaspoon Coriander powder
1 Teaspoon Kashmiri chili powder/Paprika
1 Teaspoon Ginger Garlic paste
1 Tablespoon Olive oil to pan fry

For Pizza Base
3/4 Cup | 180gm Lukewarm Water
2 Teaspoon Sugar
1 Teaspoon | 3g instant yeast
1 1/2 Tablespoon Extra Virgin Olive oil
125g | 1 Cup All Purpose Flour/Maida
125g | 1 Cup Whole wheat Flour/Atta
1 Teaspoon salt
1 Teaspoon Olive Oil, to brush the Dough

Toppings:
3 Tablespoon Pizza Sauce
113g Mozzarella cheese shredded
Boiled Corn, Bell Peppers & Onions Cubed
Fried Paneer Cubes
Dried Basil/Oregano, Chili flakes, to garnish
Extra virgin Olive oil, to garnish

Method

1. Weigh both the Lukewarm Water and flour for a perfect result always. It will save your valuable time.
Water should not be boiling hot else it will kill the yeast. Add Sugar and mix till dissolves.

2. Add instant yeast. If using Active Dry Yeast, let it rest for 10 mins till Frothy on top. Instant yeast does not need to rest. Add the liquid mix into a Big Bowl. Add Olive Oil.

3. Add half of all purpose flour & whole wheat flour and salt to the wet ingredients. Mix with a spatula/ spoon.

4. Add remaining half, Knead for 5-10 mins.
Do not add more than 3-4 Tablespoon of Extra Flour During Kneading

5. Grease the Bowl & the Dough with Olive oil, keep covered in a warm place till Doubles.

6. Once Double in size, punch the air out, make a smooth ball. Divide into two parts.

7. Roll out around 10 inches. Apply pizza sauce, mozzarella cheese, toppings. Add the fried paneer cubes. Top with more Mozzarella.

8. Bake /450F in a preheated oven for 10-11 mins.

INGREDIENTS
For Puree
3 Medium Sized Tomatoes, 350g
3 Big Sized Garlic cloves
1 inch Ginger
1 Green chili
10 Soaked/Boiled Cashews

For Paneer
250g Paneer Cubes
1/2 Tablespoon Butter, 1/2 Tablespoon Oil to pan fry
Salt to taste
Pinch of Kashmiri chili powder
Pinch of Turmeric Powder

For Gravy
1 Tablespoon Butter, 1 Tablespoon Oil
1 Bay leaf, 3 Cloves, 3 Cardamom, 1 Cinnamon
1 medium sized Onion, finely chopped
1/4 Teaspoon Turmeric powder
2 Teaspoon Kashmiri chili powder
1 Teaspoon Coriander powder
1/2 Teaspoon Cumin powder
Tomato cashew paste
Salt to taste
3/4 Teaspoon Sugar
Hot Water
Fried paneer cubes
1 Teaspoon Dry Roasted Kasuri methi, crushed
2 Tablespoon Cream
Pinch of Garam masala
Chopped Coriander leaves
1 Tablespoon Butter

Method
1. Dunk the Paneer Cubes in Warm Water for 10 minutes to make it Softer. Drain them out. This is optional but makes the Paneer Softer as it stays refrigerated.
2. Pan Fry the Paneer Cubes in oil and Butter. Add pinch of Turmeric, Kashmiri Chili powder and Salt to taste. Fry till Slightly Golden on Medium Low Heat. Keep Aside.
3. Make a Puree of Tomatoes, Ginger Garlic, Green Chili and Soaked Cashews. Do not add water to this.
4. In the Same pan, add some oil and Butter. Add Whole Spices, finely chopped Onion. Fry till Onions turn slightly brown.
5. Add Turmeric, Cumin, Coriander and Kashmiri Chili powder. Add the prepared Tomato Puree. Mix well.
6. Add Salt and Sugar. Cover Cook on Low Heat for 15 Minutes. Stir in Between.
7. Cook the mixture till water dries up. Add Hot Water. Check Salt, If required add more. Add the Fried Paneer Cubes.
8. Dry Roast Kasuri Methi leaves on a pan for few seconds and then crush them finely. This helps give a Great Flavor Profile to the Paneer Gravy. Add to the Gravy.
9. Add Cream, Garam Masala and Coriander Leaves. Add Butter. Bon Appetit 🍽️ 🥰

INGREDIENTS
For Chicken
480g - 4 small Chicken Breast Fillets
2 Tablespoon - Yogurt
1 Teaspoon - Salt
1/2 Teaspoon - Black Pepper
1 Teaspoon - Garlic Powder
1/2 Teaspoon - Paprika
1 Teaspoon - Onion Powder
1/2 Teaspoon - Oregano
2 Teaspoon - Olive Oil, To Pan Fry

For Veggies
1 Teaspoon - Olive Oil
Cubed Red Bell Pepper, Carrot & Beans
Salt & Pepper
Pinch of Garlic Herbs Seasoning

METHOD

1. Pound the Chicken Fillets on the Thick Side Flat for even faster cooking with the help of a meat mallet. You can also use any heavy flat object. Score few parallel Cuts.

2. Make the Marinade by mixing together Yogurt, Salt, Pepper, Garlic Powder, Onion Powder, Paprika and Oregano. Brush the Marinade on the Fillets on both Sides.

3. Pan Fry Veggies of your choice in Olive Oil on Medium Heat. Do not use too much Oil. Took around 10-12 minutes for the beans to cook. Set them Aside.

4. In the same pan, add some more Olive Oil and Pan fry the marinated chicken fillets Scored Side down on Medium Heat for 5-6 Mins or till Golden Brown. Flip the Side and Cook again for 6 minutes or till gets Golden Brown. Do not Overcook. If the Chicken Breasts are Large in Size, it may take few more minutes to cook.

5. Let them Rest on a Chopping Board for 5 minutes covered. Slice along the cuts. Garnish with Parsley. Serve it with the Veggies and Ranch Dressing, optional.
