We have achieved notable milestones through initiatives such as the DINING by the Awards series in 2019, 2022, and 2023, the Chinese Master Chefs Master Finale Gala in 2022, the 2016 East Meets West: Paris x Vancouver dining event, and the 2014 Chinese Master Chefs Gold Medal Dinner. For one night only — Vancouver’s dim sum maestro and new-wave chefs join forces with Executive Chinese Chef Chan Hon-Cheong of Grand Hyatt Hong Kong’s iconic One Harbour Road.

Full chef line up will be announced next week. Stay tuned.

Presented by Scotia Wealth Management®, the 2025 Dim Sum Gala is a one-night celebration of heritage and innovation through the world’s most connected Chinese culinary tradition—DIM SUM.  Uniting visionary chefs from Hong Kong and Vancouver, the gala marks the 16th annual Chinese Restaurant Awards and is part of Destination Vancouver’s Dine Out Festival – World Chef Exchange.

A part of the Gala will be to raise fund for a Chair in Regenerative Medicine and Inner Ear Therapeutics at the new St. Paul’s Hospital on the Jim Pattison Medical Campus, which is now a top priority in research to help restore hearing for British Columbians affected by hearing loss.

More than a food critic, Chua Lam (蔡瀾) was a true connoisseur of life — witty, worldly, and wildly passionate about flavour. He didn’t chase luxury; he celebrated soul.

In a 2015 interview with A Bite of China《舌尖上的中國》, he revealed his “must-eat-before-death” list — at the very top: lard rice (豬油撈飯), a humble yet deeply comforting dish that speaks volumes about nostalgia and taste.

His list spanned borders and cultures:
charcoal-grilled sea whelk, Teochew crispy sugar-coated taro, French white asparagus, lamb, Malaysian durian, Sichuan mapo tofu, Okinawan mozuku, and fugu (pufferfish) — each bite a memory, each dish a love letter to life.

Rest in peace, Mr. Chua. You showed us that the best meals aren’t always fancy — they’re unforgettable.

In Hong Kong, the Teochew community has long played a vital role in shaping the city’s development, culture and cuisine. While many associate Chiu Chow flavours with legacy restaurants, smaller hidden gems continue to preserve and showcase this culinary heritage.

The H Kitchen 好蔡館 in Prince Edward is one such discovery. Opened by the brother of Howard Cai 蔡昊 —founder of Howard’s Gourmet 好酒好蔡 —this unassuming eatery is dedicated to time-honoured Teochew dishes.

Highlights include marinated clams with aromatic vinegar and house-made jus, soy-braised goose and foie gras steeped in master stock, and a young oyster pancake that strikes the perfect balance between crisp edges and a moist, tender interior. Stir-fried rice noodles are elevated with dried shrimp roe, while the meal closes with a smooth Teochew yam paste with ginkgo.

A quiet contender in the city’s Chiu Chow dining scene, serving tradition with quiet confidence.

Once a staple of frugal ingenuity, this dish—made from slow-braised pomelo skin—has become a rare delicacy. Its origins are humble: a desire not to waste, even the peel of a fruit. But in the right hands, it transforms into something quietly exquisite.

At Cuisine Cuisine at The Mira in Tsim Sha Tsui, Chef Edwin Tang has redefined the dish with striking elegance. His version— with his refinements and bathed in abalone sauce, finished with powdered dried shrimp roe—is now widely regarded as one of the finest interpretations for its clarity, balance, and finesse.
