Traditional Pie from PetroSA - Sharing the Recipe!

Ingredients:
For the crust:

1 cup of flour
1/4 teaspoon of salt
2 tablespoons of sugar
113 g of cold butter
1 egg
2-3 tablespoons of cold water
For the filling:

4 cups of milk
1 cup of sugar
2 tablespoons of butter
2 eggs
1/4 teaspoon of salt
6 tablespoons of cornstarch
2 teaspoons of vanilla extract
1/2 teaspoon of ground cinnamon for sprinkling
Preparation:
Crust:

In a large bowl, mix flour, salt, and sugar. Add cold, diced butter and cut it into the flour until the mixture resembles coarse crumbs. Beat in the egg and add cold water to form the dough. Roll out the dough and line a pie dish, forming edges. Chill in the refrigerator for 30 minutes.
Baking the base:
2. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit). Line the dough with parchment paper and fill with weights (e.g., dried peas or beans). Bake the base for 15 minutes, then remove the weights and parchment and bake for about 5 more minutes until golden. Remove from the oven and let cool.

Filling:
3. In a saucepan over medium heat, bring the milk to a boil. In another bowl, mix eggs, sugar, cornstarch, and salt. Gradually add the hot milk to the egg mixture, stirring continuously. Return the entire mixture to the saucepan and, stirring, bring it to thicken. Remove from heat and stir in the vanilla extract.

Assembling the pie:
4. Pour the hot filling into the prepared crust. Sprinkle with ground cinnamon on top. Cool to room temperature, then refrigerate for at least 2 hours before serving.

This pie pairs wonderfully with a cup of tea or coffee.
