Friday Dinner 🍝 Penne Tomato Pasta 🍅
Ingredients:
▪︎2 cups penne pasta
▪︎6 chicken thighs (cubed or sliced)
▪︎1 can chopped & peeled tomatoes
▪︎2 tbsp tomato paste
▪︎1 onion (chopped)
▪︎1 green pepper (chopped)
▪︎1 tsp garlic paste
▪︎1 tsp paprika
▪︎½ tsp black pepper
▪︎1 tbs sugar
▪︎Fresh parsley (chopped, for garnish)
▪︎2–3 tbsp oil or butter
▪︎½ cup water (adjust as needed)
▪︎Salt to taste
Method:
1. Boil penne in salted water, drain, set aside.
2. Heat oil or butter in a large pan. Sauté onion, garlic paste, and green pepper until softened. Add the chicken pieces, season lightly with salt and pepper, and cook until golden. 🧂
3. Stir in paprika, tomato paste, and cook for a minute to release flavour. 🍅
4. Add the can of tomatoes, sugar, and water. Let it simmer on low heat until thickened.
5.Toss in the cooked pasta and mix well.
6. Sprinkle with chopped parsley 🍃
