Bite-Sized Sweetie Pies.
Marshmallow meringues piped onto mini Marie biscuits and smothered in milk chocolate. Treat your sweetie pie to a few bite-sized sweetie pies, recipe below…
Sugar 125ml
Water 25ml
Egg 1 Large White
Gelatine Leaf 1
Vanilla Extract ½ Teaspoon
Mini Marie biscuits
Milk Baking Chocolate
Bring the sugar and water slowly to the boil and allow to bubble for a couple of minutes. Place the gelatine in a bowl of cold water to soften, then squeeze out the excess water and add to the hot syrup and stir in well. Beat the egg white until soft peaks form, then slowly drizzle in the hot syrup and keep beating until the meringue has cooled. Mix in the vanilla then transfer to a piping bag and pipe the meringue onto the mini Marie biscuits. Melt the chocolate in short bursts in the microwave then gently spoon over the sweetie pies and allow to set.
