Recreate Chef Jenny’s Crab Stick Slaw, dedicated to wasabi lovers and lazy lunchers — this cool, creamy and spicy slaw is just sweet enough to keep you coming back for more.
Ingredients:
❗️For the slaw:
• 1 ½ cups finely shredded green cabbage
• ½ cup finely shredded purple cabbage
• 10 crab sticks (surimi), shredded or pulled apart
• 2 spring onions, finely sliced
• 2 julienned carrots,
• 1 cup cucumber matchsticks,
• Juice of 1 large orange
❗️Garnish:
• 1 tablespoon toasted black and white sesame seeds
• 1/4 cup radish sticksFor the dressing:1/2 cup Japanese mayonnaise (Kewpie preferred)
1 teaspoon wasabi paste (more or less to taste)
1 teaspoon runny honey or more to taste
• 1 tablespoon soy sauce
• 2 teaspoons sesame oil
• 1 tablespoon rice vinegar
• 1 tablespoons orange zest
• 1 tablespoon finely chopped ginger
• salt and pepper to taste
• Chopped mint and coriander to taste
❗️Method
1. Mix the dressing:In a small bowl, whisk together all the ingredients for the dressing., taste and adjust
2. Prep the slaw: In a mixing bowl, combine shredded cabbage, spring onions, and crab sticks, orange juice. (Add any extras if using.)
3. Toss & chill:Pour the dressing over the slaw and toss gently to coat everything evenly. Sprinkle with sesame seeds.
4. Serve:
Serve immediately for crunch, or chill for 10–15 minutes to let the flavours mingle.
❗️Jennys Tip:This also works brilliantly with finely sliced smoked salmon or prawns instead of crab sticks — or as a topping on bao buns with a drizzle of sriracha.
