πŸ‹ No-Bake Lemon & Berry Sunshine Dessert

πŸ›’ Ingredients (Serves 4–6)

β€’ 1 cup fresh cream
β€’ Β½ tin condensed milk
β€’ Zest of 1 lemon
β€’ ΒΌ cup freshly squeezed lemon juice
β€’ 1 packet Tennis biscuits or shortbread biscuits, crushed
β€’ 1–2 cups fresh strawberries, sliced
β€’ Β½ cup blueberries (or mixed berries)
β€’ Fresh mint (optional, for garnish)

1. Whip the cream until soft peaks form.
2. Fold in the condensed milk, lemon zest, and lemon juice.
πŸ‘‰ The mixture thickens naturally into a smooth lemon cream.
3. Crush the biscuits using a rolling pin or food processor.
4. Layer in glasses or a dish:

β€’ Lemon cream
β€’ Fresh berries
Repeat and finish with berries on top.
5. Chill for 30–60 minutes before serving.
6. Garnish with mint or extra lemon zest if you like.

🍝 Spaghetti Bolognese – Simple, Classic & Always a Winner! 😍
Made super easy with a flavour-packed cook-in sauce. Dinner sorted in just 30 minutes! πŸ™Œ
Serves: 4
Time: About 30 minutes

πŸ›’ Ingredients List:
1 packet (500g) PnP No Name spaghetti
Glug canola oil
500g PnP beef mince
Salt and milled pepper
1 packet (70g) tomato paste
1 packet (55g) PnP bolognese cook in sauce
2–3 Tbsp (30–45ml) water

πŸ‘©β€πŸ³ Method:

Cook the pasta in a pot of boiling water for about 7–8 minutes. Strain and rinse under cold water to stop the cooking. Set aside.
Heat oil in a pan, add the mince and season with salt and pepper. Brown for about 5 minutes, then add the tomato paste and cook for another minute.
Empty the cook-in sauce sachet into a mug and mix with just enough water to create a paste. Add the sauce to the mince and cook for 10 minutes.
Mix the pasta through the warm bolognese mince and serve.

⭐ Cook’s Note
Splurge – finish the pasta with grated parmesan or gruyΓ¨re cheese or toss through 2 Tbsp (30ml) basil pesto.

🍲 Lamb & Tomato Stew🍲
Tender, melt-in-your-mouth lamb simmered in a rich, velvety tomato sauce – perfect for sharing with family and friends. ✨

Serves: 6–8 | Cooking time: About 2 hours

πŸ›’ Ingredients:
Salt and milled pepper
About 1kg lamb-stew meat
Glug olive oil
3 onions, chopped
3 cloves garlic, chopped
1 tsp (5ml) paprika
1 tsp (5ml) chilli flakes
Β½ cup (125ml) red wine
1 packet (400g) PnP sweet tomato gravy cook-in-sauce
1 can (400g) chopped tomatoes
1 Tbsp (15ml) brown sugar
1 cup (250ml) beef stock

For serving:
Mint, chopped
Green olives, pitted and chopped
Feta

πŸ‘©β€πŸ³ Method:
Season lamb with salt and pepper.
Heat oil in a large pot over medium heat and brown meat all over. Do this in batches to avoid overcrowding the pot.
Remove and set aside.
SautΓ© onions in the same pot for 5–8 minutes, or until soft.
Add garlic and spices and cook until fragrant, 1–2 minutes.
Pour in wine to deglaze pot.
Add the cook-in sauce and canned tomatoes and stir until combined.
Return meat to pot, cover and reduce heat.
Simmer for 1–1Β½ hours, or until soft and falling off the bone.
Mix the mint, olives and feta together and serve with the lamb.
