The Allergen Baker

The Allergen Baker A podcast where gluten-free living meets real talk, expert tips, and a dash of humour. We are here to make gluten-free life easier.

Hosted by Diana Swales, a celiac warrior and gluten free baker of 25 years. Follow for tips, laughs, and great food! A sufferer of celiac disease, Diana’s discovered that her children also suffered from preservative allergies, leading her to develop a bakery specialising in providing safe food for people with food allergies. Her company’s products are made in small batches by hand, by people with

food allergies, as they truly understand that it can cause serious harm if the business is not absolutely sure about how its products are produced. Since her end customers are people with food allergies and vegans in particular, the business currently supplies health shops,Spars and Pick ‘n Pay around Western Cape and Gauteng. She hopes to ultimately cover Pick ‘n Pay on a national scale, by opening a string of smaller operations servicing specific areas. She says that her future plans include developing a fresh pastry dough that can be shelf stable for two to three days, as well as to market a range of frozen food products. She is confident in her ability to achieve this, as the company already has numerous flour combinations that serve as replacements for normal flours, so developing new products is a relatively short process. Diana points out that the Allergen Baker is on the cusp of greatness, as the need in the market for such products is growing. At the same time, she says, she remains committed to her desire to keep abreast of market changes by developing new products and her need to remain a production leader in allergen products, at affordable prices for all.

I’m curious — what’s been your biggest frustration when it
comes to gluten-free living?

When I was first diagnosed with celiac disease, the advice

I got was

literally a piece of paper that said:

❌ Avoid bread

❌ Avoid pasta

❌ Avoid anything with flour

That was it.

No one told me how to actually live gluten-free.

No tips on what to eat.

No support.

No roadmap.

Just a list of “don’ts.”

😩 It was confusing.

😠 It was frustrating.

🥖 And don’t even get me started on the rock-hard, tasteless GF bread…

If you’ve ever felt like you were thrown into the deep end without a float,

I see you.

Whether you're newly diagnosed or years into the journey, comment below —

let's make this easier together 💬👇

Tired of paying for tiny loaves

🚨 Bread Breakthrough Alert 🚨

I just *tripled* the size of a gluten-free loaf…

…without adding more flour. 🤯💪

It rose so beautifully, it doesn’t even fit in my toaster anymore.

Looks like I need a bigger toaster—

or maybe a bread course to show you *exactly* how I did it? 😉

If you've been battling gummy bottoms or brick-like bakes, come join me and let’s turn your loaves into legends.

📚🍞 My gluten-free bread course is open now—and your toaster *might* not be ready for it. 😅

"I’ve been there. I’ve declined invitations just to avoid that uncomfortable conversation.

I’ve felt the guilt of watching hosts scramble to accommodate me, the embarrassment of having to ask servers about ingredients, and the isolation of bringing my own meals to family gatherings. 🍽️

There’s grief too—the mourning of favorite foods 🍔, those spontaneous breakfast outings 🍳, and the frustration when cross-contamination happens despite all precautions. 🚫

Food anxiety is always lurking. Will this make me sick? 🤔 Did they change something? Is it really safe? 🧐

The emotional side of living with celiac disease is rarely talked about.

But acknowledging it is the first step towards healing—healing not just our bodies but also our relationship with food and social connection. ❤️

If you’re feeling this too, know you’re not alone.

We are all navigating this journey together. 💚
Lets here your frustration below or non frustration!
