We experienced a remarkable evening at Flames, with dishes that reflect the soul of South African flavours, crafted by a stellar culinary team. Executive Chef Wesli Jacobs and Executive Sous Chef Katlego Mlambo are infusing Flames with new energy, drawing on locally sourced ingredients and global techniques to offer an elevated dining journey.
Our experience included:
🌊 Catch of the Day Ceviche – A vibrant starter featuring coconut cream and a squid ink sago cracker for a delightful mix of flavours and textures.
🍅 Beetroot Burrata – This creamy burrata with beetroot textures and aged balsamic brings a fresh yet decadent twist to the table.
💎 24-Carat Gold Fillet – A luxury like no other; this gold covered steak, is flamed table side and is a delight!
🍖 Karoo Lamb Saddle – South African tradition with a twist, featuring chakalaka and ras el hanout-spiced carrots, a creation that speaks to the heart of South African flavors.
🍮 Vanilla Crème Brûlée – Classic yet unique, with strawberry gel and berry salsa adding a touch of freshness.
🍫 Dark Chocolate Banana Fudge Cake – A rich and decadent dessert, with smoked dark gelato and spiced banana caramel.
Chef Katlego’s journey is deeply rooted in South African heritage, shaped by his early culinary experiences in his grandmother’s kitchen, where food was a source of joy and connection.
