Sugar caramelises quickly over heat—but leave it there too long and it goes from sticky and glossy to bitter and burnt.

1. Season and cook the meat normally.
2. Wait until the meat is nearly done.
3. Brush on a thin layer of sauce.
4. Turn it frequently over medium heat.
5. Add another light coating just before serving.
