Spicy Buffalo Wings with Ranch Dressing
Ingredients:
For the chicken wings:
12 large chicken wings
2 teaspoons garlic salt
2 teaspoons onion powder
Oil, for deep-frying
125 ml (4 fl oz / ½ cup) tomato sauce (ketchup)
2 tablespoons Worcestershire sauce
50 g (1¾ oz) butter, melted
Tabasco sauce, to taste
Ranch Dressing:
1 small garlic clove, crushed
185 g (6½ oz) mayonnaise
125 ml (4 fl oz / ½ cup) buttermilk
2 tablespoons finely chopped flat-leaf (Italian) parsley
1 tablespoon chopped chives
1½ teaspoons lemon juice
1½ teaspoons Dijon mustard
1 teaspoon onion powder

Instructions:
1. Remove and discard the tip of each chicken wing, then cut in half at the joint.
Combine the garlic salt, onion powder, and 2 teaspoons of ground black pepper, and rub the mixture into each chicken piece.
2. Deep-fry the chicken in batches over high heat for 2–3 minutes, then remove from the oil and drain on paper towels.
Put the chicken in a non-metallic bowl with the combined tomato sauce, Worcestershire sauce, butter, and Tabasco, and toss.
Cover and refrigerate for at least 2 hours, or overnight.
3. To make the ranch dressing, mash the garlic and ¼ teaspoon salt.
Add the mayonnaise, buttermilk, parsley, chives, lemon juice, mustard, and onion powder and whisk together.
Season, cover, and refrigerate for at least 1 hour.
4. Preheat a barbecue flat plate to medium direct heat.
Cook the chicken for 6–8 minutes on each side.
Serve hot with the ranch dressing.
