Today I sat in a classroom, not as a chef, not as a businessman, but simply as a father.

Watching my daughter receive another academic award reminds me how proud I am of the young woman she is becoming. Her dedication, discipline, and commitment to learning inspire me every day.

But more than the awards, I always remind her of something important:

Enjoy being young. Enjoy being a teenager.

Spend time with family.
Laugh with your friends.
Create memories.
Discover who you are and who you are meant to become.

Achievements are wonderful, but life is not only about medals and recognition.
It is about character, kindness, faith, family, and the joy of the journey.

To my daughter:
Continue to study well, dream big, and work hard, but never forget to live your youth with happiness and gratitude.

Dad, Mommy, Tito’s and Titas and the whole family is proud of you. Always.

❤️

There are moments in life when you pause… and simply say thank you, Lord.

Today We visited Barasoain Church , a place filled with history, faith, and purpose. As I sat quietly inside, I couldn’t help but reflect on the journey that brought me here.

The struggles.
The risks.
The failures.
The breakthroughs.

Through it all, God has been present - guiding, protecting, and opening doors I never imagined.

Sometimes we chase success so hard that we forget to acknowledge the One who made it possible.

Today was a reminder:
Faith is the foundation of every blessing.

Grateful for the journey. Grateful for the calling. Grateful for the grace.

🙏

Building restaurants is one thing.
Building a brand that can scale is another.

Over the past years, we have been developing **Brick Wood PH** — a restaurant concept that blends **American-Mexican comfort food with Asian flavors**, supported by a **commissary-driven supply system and structured operations**.

What started as a restaurant vision is now evolving into a **scalable brand ready for expansion**.

We are now opening opportunities for **investors, franchise partners, and expansion collaborators** who want to be part of a growing hospitality brand.

Why Brick Wood PH?

• Proven multi-branch restaurant operations
• Commissary-backed supply chain
• System-ready and scalable model
• Hands-on training and launch support
• Chef-led brand development
• Multiple revenue streams

We believe great food builds great businesses — but **systems build sustainable growth**.

If you are interested in exploring franchise or partnership opportunities, I’d be happy to connect.

Let’s build something meaningful together.

Our best-selling Barbeque US Pork Ribs continues to drive repeat demand - and our expansion roadmap across Cavite and South Luzon is already in motion.

We are opening limited franchise discussions.

Stop Mixing Up Food Cost and COGS - It’s Costing You More Than You Think.

In the restaurant business, margins don’t disappear overnight.
They erode quietly through operational blind spots.

One of the most common?

Treating Food Cost and COGS as if they’re the same thing.

They’re not.

Food Cost answers:
“What should this dish cost to produce?”
It’s theoretical. Built from recipes, portion standards, and pricing strategy.

COGS answers:
“What did we actually consume to generate sales?”
It includes wastage, variances, packaging, spoilage, and operational inefficiencies.

Food Cost lives in your recipe file.
COGS lives in your financial statement.

Here’s where it gets serious:

If your theoretical food cost is 28% but your COGS is 36%, that 8% gap isn’t accounting noise.

It’s an operational reality.

That variance usually exposes:
• Over-portioning
• Weak stock control
• Process inefficiencies
• Shrinkage
• Inconsistent ex*****on

Strong operators don’t just compute food cost.
They monitor the gap.

Because profitability isn’t accidental.

It’s engineered.

Most restaurant owners track Food Cost.

Few understand COGS.

And that’s where margins quietly disappear.

If your theoretical food cost is 28%
But your COGS is 36%

You don’t have a pricing problem.

You have an operational discipline problem.

Profitability is engineered.
